No Noodles Needed

It hit me at work this afternoon just how much crap I had to do when I got home from in order to leave at a decent time tomorrow. So I made a list and decided to divide and conquer.

First my afternoon fuel.

It was my last Glo Bar. πŸ™ Until we meet again my pretty. *sniff*sniff

And on to the craziness.

My List:

  • Move Blanket to Dryer
  • Finish Packing Clothes
  • Pack Toiletries
  • Make Lunch for Tomorrow & Breakfast on Saturday
  • Pack Snacks
  • Pack dog food & treats
  • Clean Maddie’s Crate
  • Unload Dishwasher
  • Make delicious and nutritious dinner!

The last one was my favorite part. πŸ™‚

The idea for dinner has been in my head all week. It’s not a new one, but it had been way to long.

I did have a bit of problem keeping my no noodle lasagna together as I took it out of the pan, but who said food has to look good to taste good? This lasagna rocked!

This is a perfect pasta dish for a girl like me who could actually care less about the actual pasta noodle. πŸ˜‰

Can’t forget dessert.

I had a Vitalicious Brownie with some Coconut Milk Ice Cream on top.

Since my to-do list is just about marked off I can spend the rest of the evening chilaxing.

GREAT idea πŸ™‚ Especially with all the extra zucchini and squash we got from our summer CSA sitting in our freezer at the moment! πŸ™‚

And LOVE the dessert… I just ran out of my vitabrownies πŸ™ I need to get some more this weekend!

Ooooh delicious!! I’ve made a zucchini lasagna before with strips of it and it’s so tasty! I’d much rather load up on my veggies than pasta πŸ™‚

Genius with your creation! I am a total carb queen, but this looks so delicious that I don’t think I’d even miss the noodles.

I have a recent obsession with the Vitalicious products. My co-worker has spoiled me with the CranBran Vitatop yesterday and the Chocolate Vitamuffin today. Which today, I heated it up in the microwave for 30 seconds-heaven. You should check out my post to see how melty the chocolate chips got.

I’m trying your lasagna!! I’m not going to tell my boyfriend though so he’ll think it’s regular lasagna, till he bites into it and LOVES it!

I had one of those brownies for dessert too!! They’re so yummy!

wow that looks great! I made something similar to that last Sunday, but I cut the zucchini lengthwise instead of in rounds- and it stayed together when serving it. I think maybe also because I used an egg and ricotta so i had the binding factor.

I love faking myself out with foods that are seemingly so rich but are really nutrient dense and low in calories like this one. yum!

Your lasagna looks great! Anything with marinara sauce makes me happy, noodles aren’t necessary at all!

Great veggie lasagna love! I like making “pasta” without the pasta too! I’m super excited to get my spiralzier soon too, then I will be outta control! Whoot.
