Quick Lunch & Giveaway

I’m slammed at work, so I need to make this quick! But, don’t worry I have a fun giveaway at the end to make up for it. πŸ˜‰

Mid-morning I snacked on a dozen Roasted Almonds.

All I’ve been eating lately have been raw almonds, I forgot how good the roasted ones are.

Lunch was a random plate of eats that I quickly threw together on my lunch break.

Lunch looks yummy! I love meals where you have a little bit of everything you want!! I haven’t tried agave yet and really want to ! I would use it to make granola and your carrot cake cupcakes! The cupcakes would be perfect for my sister in laws birthday!!

Im also a HUGE fan of carrot cupcakes, the frosting looks amazing : )

On that note, if you are looking for good fuel for your marathon training runs, have you tried the GU Energy Gel in vanilla or chocolate? Tastes just like frosting…if you can imagine running and having a spoon full of frosting : )

I would definitely try the carrot cake cupcakes (carrot cake is my favorite, and it was my traditional birthday cake), but I would also try using it in my famous oatmeal toffee chip cookies. Agave is much healthier than the white/brown sugar I have been using… πŸ™‚

I ran across a recipe for dark chocolate whole wheat zucchini brownies made with agave. I’m intrigued…so that’s what I would make! πŸ™‚ I’ve also been trying to wean myself off of artificial sweetners, so I’m thinking agave would make a nice substitute in my morning coffee!

I think I would try it in banana bread. I bought too many this week and will need to mash some up and freeze. I’ve never tried it out before, but I thought it also might be a good substitute for sugar in my oatmeal and coffee.

I have seen this product circulate around the blogworld and I’m really itching to try it! Hmm…. what wouldn’t I make is the real question! I’ve been wanting to make a healthy version of raspberry and lemon pound cake… Oh, and also, I bet xagave nectar is FANTASTIC for alcohol beverages. YUM. (sugar syrup is not only inconvenient to make, but it adds so many more calories to a delicious cocktail.)

I was just looking at agave nectar a few days ago!

I’m thinking a simple basic cupcake with jasmine tea flavors would pair well with agave nectar, plus be easy enough to adapt if I can work out the substitutions.

This weekend I was at a vegan restaurant for brunch and had agave in my oatmeal. It was SO GOOD. I’d definitely make lots of yummy oatmeal bowls with the agave. Oh, and I want to try making a breakfast cookie!

A recipe on the Xagave website caught my eye Blueberry-Cranberry Granola Bar Muffins! I would love to try making these.
I have been using agave lately in a lot of things instead of honey. I like that it is low on the glycemic index.

Hi Meghann! If I won the Xagave, I would bake an assortment of goods, and bring them over to my fiance’s parents house in an effort to convince them to try healthy sugar subsititutes! My fiance and I have been quite concerned over his parents’ health for the last couple of years, and we have been slowly helping them make positive changes in their diet (of course, your blog is one of my inspirations for healthy food ideas!). Switching to Xagave would be another move in the right direction! Thanks!

MMMM how to choose. I think i might make a banana bread of sorts with some ripe nanners, nuts and agave.

And i would def make some carrot cake muffins, (me and my sis were just talking about these last night!)

The first time I ever used Agave was when I made black bean brownies (and they were excellent!) I have fallen in love with the stuff ever since and would absolutely love a big bottle of it!

I have been reading your blog for the past couple of months and all the pictures of cupcakes have made me want one. Recently my dr put me on a new drug that requires me to eat low glycemic diet which means most sweets are out. I would love to try the xagave in sweets to see if meets my diet needs. I noticed that it is an low glycemic product and that it can be used for people like me who have to watch their blood sugar. I would make all kinds of sweet…specially cupcakes which i have been craving…with this bottle.

I personally adore carrot cake (it may just be my favorite) but I never have it unless I make it myself because I can’t stand cream cheese (and everyone else wrecks it with stupid cream cheese), so I would love to try the carrot cake! But I also love agave on plain greek yogurt or in granola.

Some MAD baking would definitely occur with the agave. I’m the volunteer baker for all of my coworker birthdays and I have FOUR coming up in September! Perhaps I’ll sneak in the agave instead of crazy amounts of white sugar. Just halfway crazy amounts maybe!

hello! I have never tried agave nectar before, but have seen it SO many times in the blogging world. What to make……mmm……..I’d have to say I would try it with banana walnut bread(I love the bread, but the batter is just as tasty:) or mix it really well into oatmeal in the morning. now THAT would be interesting to try……….:)

I love to bake and love desserts, so I would probably try anything. I think a cake, bread, or bar cookie or some sort would be delicious! Your cupcakes also looked great, so I would give those a whirl! =)

oh man, cool! I always see interesting and yummy looking recipes on blogs but they have ingredients like this that I’m either too lazy/too busy/too cheap to add to my college student pantry. haha. I would definitely want to try the awesome looking carrot cake cupcakes, but I’d probably be more likely to do something along the lines of chocolate chip or raw pb cookies… yum πŸ™‚

Delurk (I don’t think I’ve delurked here…): I would probably try making the carrot cake that was raved about not only here but also your sister’s blog, Caitlin’s and Megan’s. I’m also likely to try making morning muffins with it – it is difficult to justify having muffins every morning when you have to use sooo much sugar! It would be interesting to see what the nectar/syrup does for them…

I literally cannot get it over here at the Ramstein, Germany Air Force Base commissary! I have looked!! I would love to try agave! My hubby and I don’t believe in cooking/baking with artificial sugars like Splenda or Sweet ‘n Low. We would rather have a natural sweetener like sugar or AGAVE! I would love to try it with my mom’s zucchini bread recipe. πŸ™‚

I have yet to try Xagave, although I have tried other brands of agave nectar. I like the fact that you only need 1/3 cup of agave in place of 1 cup of sugar. From someone who swore that they would never like agave, it is now my go to sweetener for quick breads, muffins, and cupcakes. I haven’t figured out a ratio for cookies yet. Maybe that cookbook has some good recipes in it. Btw, I was drooling over your cupcakes you made a few days ago!

I would love some Xagave. Hmmm. I would probably try that carrot cake! Carrot cake is my favorite cake… especially in cupcake form. But I like to use agave in lots of stuff… oatmeal, on top of waffles, in smoothies, etc.
