Carrot Cake Cupcakes

It’s all downhill from here. hehe ๐Ÿ˜‰

I am happy to say the rest of my day flew by. I love Fridays! Everything about them just rocks.

This afternoon I was a bit apprehensive about trying this Peach Fruition Bar.


It was a Healthy Living Summit swag bag goodie and I’ve heard mix reviews. Personally I’m not a fan of fruit flavored bars – especially raw ones – but I like to try everything just once to see if there’s a chance this bar is different.


I was pleasantly surprised that I actually enjoyed it! The bar wasn’t too fruity or sweet and had a great overall flavor. Well done Fruition! I have the Blueberry flavor hiding in my cabinet and I’m interested to compare the two.

After work it was baking time!!!


The lovely people at BetterBody Foods sent me an example of Xagave. According to the site Xagave is a premium blend of raw & organic Agave Salmiana (White Agave) and organic Inulin from Agave Tequilana (Blue Agave).


I have seen agave nectar pop up all over the blog world, but have never experimented with it on my own. I was excited to finally be given the chance to do so. The Xagave even came with a great recipe full of ideas of how to use the Xagave in both meals and baked dishes.


Upon the initial flip my eye have been been glued to the Carrot Cake & Cream Cheese Frosting Recipe. ๐Ÿ™‚


It seemed easy enough. Throw everything in an oven and bake. Sounds good to me!



The recipe made a TON of batter. I filled up 2 dozen cups worth and had enough batter left over for atleast another dozen!


While the cupcakes were baking I started on the icing. Another Xagave recipe


The original recipe didn’t make enough so I ended up adding more butter and sugar until I had enough.


Not bad right?


I was so busy with the cupcakes that my mind was lost on what to make for dinner. I ended up throwing together a very basic, quick meal.


Some Uncle Bens 90 Second Brown Rice mixed with Great Northern Beans.


And some Okra Fries and Ketchup.


I packed up the cupcakes and headed to Kelly and Anthony’s where I started with a Tangerine Wheat Beer.


I immediately regretted buying this beer as I walked out of Whole Foods today. I drank about half, but couldn’t finish it. Yuck!

Luckily the cupcakes made up for my poor taste in beer.


I had 1 and then another 1/2 later on.

I am happy to say the cupcakes were a success!


People were going back for seconds and asking to take some home with them!


Thanks to Xagave and their great recipe for producing yummy carrot cake cupcakes!

The rest of the evening was pretty much dominated by Maddie and Oliver.

They played non stop for over 2 hours!

The whole evening was very casual and it was great to catch up with some of my favorite Orlando Girls.

Those look amazing! I am a huge chocolate person and always choose a chocolate dessert…unless there is carrot cake with cream cheese frosting!

Cupcakes look fab! I had carrot cake on my b-day this year too. Sososo good. Especially when cream cheese icing is involved ๐Ÿ˜‰

Wow, I know you say you aren’t a baker but those cupcakes look super yummy! I love baking with agave; I have an awesome banana, chocolate chip cookie recipe that uses agave and it gives them the absolutely best, moist taste!
