Hummus Pizza

Work, Work, Work… Is it the weekend yet?

I just keep reminding myself of the beer and carrot cake cupcakes I have waiting for me tomorrow night and that seems to make the day a little easier. πŸ˜‰

Good eats help too. Starting with this delish plum I snacked on mid morning.

I love how cheap plums are at the moment. They are perfectly ripe and in season. Yum!

I made a wonderful mock pizza for lunch.

The crust was a whole wheat pita.

Hummus for the sauce.

And grated Zucchini, Yellow Squash and Carrot for the cheese. πŸ™‚

Some crushed walnuts, raisins, fresh parsley and jalapenos was just what this baby needed!

After a few minutes under the broiler this baby was amazing!!!

On the side I had 2 random Garlic Stuffed Olive and a mini Pickle.

Seriously AWESOME lunch!! This pizza was so good, I would happily make it over and over again!

It’s really hard to resist the No-bake Peanut Butter Balls sitting in my fridge right now.

Alright everyone cross your fingers for sunshine after work! I am determined to make it to the park today! πŸ™‚

Thanks! I got them at Ikea for really cheap! It’s actually on my list to buy more. 4 just doesn’t seem to be enough πŸ™‚

I second runeatrepeat’s post, I love those jars. I have thing for containers, one of my minis broke this morning so seeing yours is giving me jar-envy. I really really need to stay out of Kitchen Corner this weekend. O well.

I really wish I was as creative as you in the kitchen. I feel like I eat the same stuff every single day. I change it up, but it is the same ingredients. I need to get my butt out there and buy some new stuff!

I made pizza on a whole wheat pita last night for the first time and loved it – granted I did splurge for cheese, but it was yummy!

Can you believe I was one of those odd kids who hated pepperoni? I used to literally throw tantrums when every my parents ordered it. I was the same way with spaghetti, mac& cheese and PB&J. I was not a normal child. lol

Good luck getting to the park!! Love the variety on your “pizza” – it looks so colorful and tasty. I should definitely try something like this.

I have those containers in my bathroom for cotten balls, q-tips, etc.. They are great!! I have a serious obession with ikea!!
