Not a Ginger Lover

I need to learn to stay away from bars with ‘Ginger’ in the title. As much as I love gingerbread cookie and ginger snaps, there is something about raw or crystalized ginger in bar form that grosses me out.

Case in point this afternoon I tried a new Chocolate Ginger Maca Power Bar I purchased the other weekend.

It had great potential with the promise of hazelnuts and chocolate, but halfway through all I could taste was the ginger.

I picked out the whole pieces of hazelnut then chucked the rest of bar in the trash

Luckily my dinner made up for the poor snack.

The best part was the fish thanks to this new Trader Joe’s find I brought back from Boston.

The almond meal intrigued me. I mixed the almond meal, fresh parsley, and some unsweetened shredded coconut in one bowl and egg white and milk in the other. I dipped the Tilapia in the egg mix, then the almond meal and baked in the oven at 375 for 15 minutes.

The fish was perfect on top of a massage kale salad with avocado, tomato, mushrooms and feta.

I believe I could eat this dinner over and over again. It plated beautifully and I think would make a great date dish!

Dessert was another one of Whit’s Chocolate Zucchini Cupcakes.

I believe I made the best decision when purchasing these from the bake sale. They have to be the best thing from the table.

Tonight I have slowly but surely getting my apartment back to order. I have also been tackling some to do tasks that have been on my list. One of them included hanging some B&W photos of my two babies.

I love the way this one of Abbie came out. It’s one of my favorite photos of her.

I like to think she is still playing in the field somewhere. I miss her so much.

These frames were pretty cheap from IKEA. I’m hoping to get a few more and do a puzzle on my wall of the frames. I have no decorating sense what so ever, but I do love hanging up photos! I’ll keep you updated on how my little project goes.

The photos of your puppies are so cute.

I’m not too much of a ginger fan either. One time I was at a raw foods restaurant and the owner asked me if I’d take a ginger shot. I reluctantly agreed. Gah!!! It gave me a belly ache and I’ve never been the same towards ginger.

sorry about the bar! i love ginger, but I don’t always like it everything, either. it has to mesh to be good.

I am so jealous of those cupcakes and the sprinkle on top! I love sprinkles ๐Ÿ™‚ And, that fish looks delicious- almond meal! I wish there was a TJ’s near me.

Eww. I hate crystallised ginger. The strong taste and horrible texture! (I ADORE ginger flavouring also). The fish looks sooo tasty!

I’m not the biggest ginger fan either. I’ll do the cookies and I’ll do the pickled with my sushi but that’s about it.

LOVE the B&W photos, they look so cute and so classy. Just lovely!

That salad did look great, Have you ever breaded tofu? I’m wondering if the almond meal would work on it too?

Someone else who has a problem with ginger! My husband thinks I’m just making it up. I love gingersnaps and can tolerate gingerbread, but ew ick leave out the fresh or raw or crystalized ginger if I’m going to eat it.

And, yes, Abbie is most certainly romping through a field of tall grass and wildflowers, along with all of our loved pets who have passed away.

Lovely photos of the pups… and a great way to commemorate Abbie.

I love your idea of combining unsweetened shredded coconut to the almond meal crust. The fish sounds delicious!

I’m the same way about ginger! Love ginger in cookie form, but hate ginger candies. A dash in salad dressing ain’t too shabby either.

And I don’t know how I feel about ginger outside of a baked good, but giner with chocolate definitely doesn’t sound good to me!

Very nice photos.

I make a chocolate and zucchini cake (recipe from the website of the same name) that is so moist. The thought of it makes me want one of those cupcakes ๐Ÿ™‚

YUM! That dinner looks great! I had a salad with fish on top for dinner too last night, we must have been on the same wave length. I had one of those cups cakes (thanks for sharing) and I will vouch for that fact that they are simply amazing. The pictures look so pretty I love them!
