I <3 Free Samples!! Especially yummy ones!
This morning I dug into my treasure cove of free samples from yesterday’s swag-a-palooza and brought out this Chocolate Envirokidz Crispy Rice Bar to snack on this afternoon.

Chocolate Rice Krispie Treat? Yes, Please!

The bar was the perfect mid-afternoon treat. It was gooey and crispy at the same time. Yum! Too bad I only grabbed one!
Sadly dinner contained no free samples, but it still tasted great.

A Spaghetti Squash has been staring me down on the counter for a couple of weeks now, so I finally decided to put it out of it’s misery and build my meal around it tonight.

I halved and baked the squash for 30 minutes at 375 before I tore away at the inside with a knife. While the squash was baking I sauteed 1/3 of a block of tofu, onion, garlic, kale, okra, & red pepper flakes on the stove top.

I topped the finish product with a sprinkle of shredded Parmesan Cheese.
The meal came out great. I really needed some veggies and this definitely did the trick.
Dessert was a mini Coconut Milk Ice Cream Sandwich.

This sandwich was tiny, but the couple of bites it took me to eat this was really all I needed.

Today really did fly by, let’s hope the next two days are the same way! I have laundry buzzing in the dryer and a half packed suit case yelling “feed me!” Let the final preparations begin!

I feel like when ever I am denied something I am craving, it just intensifies the craving and makes me want it even more. For instance when I was denied taboule at the Greek restaurant last week, I have not been able to get it off my mind.
I did have some at Whole Foods on Saturday and in my wrap yesterday, but it just doesn’t seem to be enough.
Last night I was once again sadden to discover my Publix does not carry pre-made taboule. Instead I was happy to discover a boxed version as a delicious alternative.
I prepared the mix last night with the addition of Cucumbers, Feta and Tomatoes. I allowed it to cool in the fridge and enjoyed it in my version of my favorite restaurant orders: a Healthy Salad Trio.
The taboule was spot on. The box made a ton so I have a feeling you will be seeing this salad a lot before I leave for Boston on Thursday.

For dipping I was excited to try these Pita Chips I picked up yesterday.
I really love this local bakery and wanted to buy everything they had to offer.
The chips were crispy and light, perfect for dipping!
I also had a couple of cucumber slices, cherry tomatoes (BOGO at Publix this week!) and a carrot to round out the plate.
With my meal I tried a new tea I picked up yesterday.
Despite the odd looking container, it was really tasty. I drank half with my lunch and am saving the other half for tomorrow.
A couple of Dark Chocolate Edamame may have passed through my lips on the way out the door as well.
