Sunday

Sundays are always my favorite day of the weekend. While Saturdays always seem to be very go-go-go, Sundays tend to be much more relaxed. Today was a good example of the perfect relaxing Sunday. :)

After spending the morning with Derek and Maddie I headed to the Village Health Market to meet Anne P. and Katrina for lunch.

Katrina is a Tampa local who writes a wonderful gluten free blog. We have been trying to meet up for a while and I’m so glad our schedules finally meshed. Katrina and her husband adopted a puppy the same day I welcomed Maddie into my life, so we had lots of puppy talk flowing around the table.

Last time I had lunch at the Village Health Market I opted for the salad bar, but this time the selections of wraps and sandwiches was what intrigued me.

I ordered the Kale Salad, Tabouli, and Hummus Wrap.

Talk about Yum!!!!!! This wrap was so delicious and fresh tasting. I have not been able to get over how good this was all day, I want to go back to Tampa just to order this wrap again.

The wrap came with a big pickle and some veggie chips.

The Kale & Hummus combo was just too good, that the veggie chips went mainly untouched, but the ones I did have were great.

With lunch I sipped on my favorite Morraccan Mint Honest Green Tea.

Anne and I split another wonderful Sweet Potato Cookie for dessert.

Just as good as I remembered.

After lunch we said our good byes to Katrina and her husband and Anne and I decided to take advantage of the anniversary celebration happening around the store.

20% off everything plus oodles of samples! Our purses were overflowing with all the free swag!

Trust me I purchased plenty of legitimate items as well. ;)

On the way back to Orlando I stopped at my sister, Kelly, and her boyfriend’s new place. Maddie finally got to meet her cousin Oliver.

By the time I got back on the road it was already after 5:00 and I needed a snack. Luckily I had a bag full of samples to choose from for a quick bite. ;)

I grabbed the Spelt Sourdough Pretzel sample bag.

It’s amazing how the two pretzels did the trick. I as able to unpack my car and run to Publix before coming home for dinner.

I was not in the mood to cook anything so I headed to the pantry for a quick fix.

90 seconds later I got this.

To bulk up the pre-made meal I added some steamed kale and greens beans that either had to be eaten or thrown away.

The combo worked and it was the perfect quick fix.

For dessert I had a Trader Joe’s Molasses cookie.

Is the weekend over already?!?!

Good thing I have a short week ahead of me and the Healthy Living Summit to look forward to at the end of it. Yay! ;)

Congrat to the Newlyweds!

First of all I need to give a big CONGRATS to the new Mr. and Mrs. Diaz!

Even though I had never met either of them before last night (they’re Derek’s friends) I have to be honest when I say I shed a tear or two during the ceremony. It was a beautiful service and the love between of two of them was instantly apparent and flowed freely through the church.

I wish nothing, but the best to David & Jackie in their bright, beautiful future!!

The beautiful ceremony was followed by a beautiful reception.

I started the party with a small plate of appetizers.

The time we went through the line the food had been picked through and as we were walking away we saw the servers bringing fresh trays of the ‘good stuff.’ I grabbed a yummy beef empanada for Derek and I to share.

While waiting for the wedding party to arrive at the reception I slowly sipped on the signature cocktail, a mojito.

I am not a big mixed drink fan, but the mojito was really refreshing. It had the perfect amount of sweetness without over doing it.

The couple have Cuban roots so there was a rich Cuban cultural theme throughout the wedding and reception which included a live latin band, a cuban cigar roller and amazing Cuban food.

This Cuban food knocked my socks off! I had a big plate of Black Beans & Rice, Cuban Pork, Plantains and Yucca.

I ate about 3/4 of the plate and gave Derek 1/2 of my pork. He actually ended up going back for 2 full plates of food. That boy loves his black beans & rice!

Of course their can’t be wedding with out cake! And this cake sure was a looker!

Unfortunately we left before the cake was cut. :( I did manage to grab two cream puffs though. :)

I love weddings and I really hope more of my friends get married in the near future. Weddings are filled with so much love and happiness, it’s hard for it not to become contagious.

After the reception Derek and I booked it to the 10:05 showing of Julie & Julia. Have I mentioned how great this guy is yet?!?!

The movie was great. It was cute, funny and really had me thinking about this blog and the future it may hold. I know a lot of people look as Julia Childs as the pioneer in the movie, but I saw Julie Powell as my pioneer. She paved this little path in the blog world that I am sure many of us can appreciate. I really would love to read her book in the near future.

(P.S. Derek totally didn’t know who Julia Childs was until I told him after the movie… hehe)

This morning Derek joined me on a slow two mile run. He’s training for his first 5k in September, so we are slowly working our way up there. I told him his goal should be 10 minute miles and I really believe he can achieve it.

When we returned I had a nice bowl of fruit covered in some Uncle Sam’s Cereal I found in the cabinet of his parent’s house.

The fruit portion consisted of Blueberries, Strawberries, Cantaloupe and Watermelon. :)

I think Derek is going back to sleep and I am going to meet up with some friends at the big Health Market anniversary sale. Everything is marked 20% off. Yippee!!!!
