Damn Camera

by Meghann on August 6, 2009

Sorry for the delay in posting! I was so focused on getting Maddie in her crate after lunch that I completely forgot my camera at home. Ooppsss….. No big deal though I can just fill you in now. πŸ˜‰

Mid morning I snacked on a Good Run Cashew Cookie.

And for lunch I took all the ingredients you see here…

CIMG7048.JPG

… and made this. πŸ˜‰

CIMG7050.JPG

Yum!

I was debating having an Amy’s breakfast burrito that was in my freezer for lunch, but it dawned on me that I could easily make my own version of the burrito with what was left in my fridge. It has been far too long since I have had a breakfast burrito and was excited to make my own.

CIMG7055.JPG

First I scrambled one whole egg with a couple of tablespoons of egg whites then microwaved it for a minute. Next, I wrapped the egg in a Flat Out Wrap with Tomato, Spinach, Pepperchini Peppers, and some Buffalo sauce. It was a hot and spicy breakfast burrito that hit the spot.

CIMG7057.JPG

The green beans I had on the side were the perfect refreshing counterpart to the spicy burrito.

CIMG7051.JPG

As were the grapes.

CIMG7054.JPG

The grapes were on their last leg, but still tasted great.

As I said above I sadly didn’t have access to my camera for the rest of the afternoon. Unfortunately, I was unable to photograph my afternoon snack of Awesome Almonds, Peanuts and Pumpkin Seeds. Such a tragedy too because it was a good mix. : )

Thankfully, I was able to get my camera back in time for Maddie’s first trip to the vet after I got off work.

CIMG7059.JPG

The vet basically scared Maddie silly. She was shaking the whole time and would not leave my side. The vet did give her a big seal of approval. He said she is 6.4 pounds of perfection. πŸ™‚ All we have to do is come back in two weeks for her last set of shots and she’ll be done.

After the vet appointment I came home starving! Good thing I already had dinner planned in my head and half of it marinating in the fridge. : )

I took the rest of my Tempeh from Tuesday night and marinated it in the leftover Apricot Soy sauce I had made last week. I baked the tempeh at 420 for about 10 minutes per side.

CIMG7082.JPG

While the tempeh was baking I cooked up some Brussel Sprouts and Beets on the stove top in a tiny amount of butter.

CIMG7079.JPG

I could have easily cooked these two separately, but that would not have as fun. πŸ˜‰ The beets and brussel sprouts worked very well together. It was a great combination.

Thanks to my planning ahead with the marinating Tempeh this meal came together almost as soon as I walked in the door.

CIMG7076.JPG

A healthy and great tasting meal in less then 20 minutes? Easy Peasy. I would never expect anything less.

I dug into half of one of Amanda’s Brownies for dessert.

CIMG7084.JPG

So chocolatey and so delish!

I am so glad tomorrow is FRIDAY! THis has been a very long, emotional week and I am so ready for it to be over. Oh, and did I mention I leave for Boston exactly one week from today?!?! Yay!!!

Brownies are one of my all-time favorite gooey dessert foods πŸ™‚

Brussels and Beets look great tonight! Poor puppy (shots) but that’s good she is healthy.

6 Holly August 6, 2009 at 10:42 pm

You are soooo good at having your treats in moderation. Do you ever just want to go back for the second half of the brownie?! What makes you stop, or do you ever indulge yourself? Gosh, I really admire your self control :o)

Yum! I love breakfast burritos! Sometimes I put a slice of prosciutto in there for an indulgent treat

The new pup is really really adorable. My bf’s 2 year old niece’s name is Maddie too, and now i’m CONVINCED that anything and anyone too cute to be true is named Maddie. hahaah

Meghann, your wrap looks fantastic!! Actually I kinda cringed when i saw the tempeh though because I tried to cook some yesterday but realized it had grown MOLD on it….yeah…never trying tempeh again. πŸ˜› Make sure you don’t let yours sit for too long in the fridge….hehehe

Have a fabulous Friday Meghann!

All your pics of you cute new maddie are maikn me want a puppy!

12 Rachel August 7, 2009 at 2:16 am

Tempeh always makes me think of chicken nuggets or chicken strips, isn’t that weird? I’m sure the texture is totally different, but for some reason I created that association.

Enjoy your Friday and especially YOUR WEEKEND!

18 Danielle August 7, 2009 at 8:33 am

What a great breakfast burrito, much more satisfying then an Amy’s I’m sure.
I hate forgetting my camera, I forgot mine at home today, luckily I have my Blackberry but the pictures aren’t that great.

Aww, sweet Maddie!

I love making meals out of stuff I already have in the fridge, go you!

I also hadn’t thought of putting buffalo sauce on eggs yet, so I have to get on that πŸ˜‰ Have a great weekend!

I just had to mention that I was way too excited to see you changed the spelling of Maddie! I think on the first post you spelled it Mady… but my pup Maddie spells it like that too. She is so precious! Keep the pictures coming… it fills my puppy craving πŸ™‚

21 Pam August 7, 2009 at 8:58 am
