Damn Camera

Sorry for the delay in posting! I was so focused on getting Maddie in her crate after lunch that I completely forgot my camera at home. Ooppsss….. No big deal though I can just fill you in now. 😉

Mid morning I snacked on a Good Run Cashew Cookie.


And for lunch I took all the ingredients you see here…


… and made this. 😉



I was debating having an Amy’s breakfast burrito that was in my freezer for lunch, but it dawned on me that I could easily make my own version of the burrito with what was left in my fridge. It has been far too long since I have had a breakfast burrito and was excited to make my own.


First I scrambled one whole egg with a couple of tablespoons of egg whites then microwaved it for a minute. Next, I wrapped the egg in a Flat Out Wrap with Tomato, Spinach, Pepperchini Peppers, and some Buffalo sauce. It was a hot and spicy breakfast burrito that hit the spot.


The green beans I had on the side were the perfect refreshing counterpart to the spicy burrito.


As were the grapes.


The grapes were on their last leg, but still tasted great.

As I said above I sadly didn’t have access to my camera for the rest of the afternoon. Unfortunately, I was unable to photograph my afternoon snack of Awesome Almonds, Peanuts and Pumpkin Seeds. Such a tragedy too because it was a good mix. : )

Thankfully, I was able to get my camera back in time for Maddie’s first trip to the vet after I got off work.


The vet basically scared Maddie silly. She was shaking the whole time and would not leave my side. The vet did give her a big seal of approval. He said she is 6.4 pounds of perfection. 🙂 All we have to do is come back in two weeks for her last set of shots and she’ll be done.

After the vet appointment I came home starving! Good thing I already had dinner planned in my head and half of it marinating in the fridge. : )

I took the rest of my Tempeh from Tuesday night and marinated it in the leftover Apricot Soy sauce I had made last week. I baked the tempeh at 420 for about 10 minutes per side.


While the tempeh was baking I cooked up some Brussel Sprouts and Beets on the stove top in a tiny amount of butter.


I could have easily cooked these two separately, but that would not have as fun. 😉 The beets and brussel sprouts worked very well together. It was a great combination.

Thanks to my planning ahead with the marinating Tempeh this meal came together almost as soon as I walked in the door.


A healthy and great tasting meal in less then 20 minutes? Easy Peasy. I would never expect anything less.

I dug into half of one of Amanda’s Brownies for dessert.


So chocolatey and so delish!

I am so glad tomorrow is FRIDAY! THis has been a very long, emotional week and I am so ready for it to be over. Oh, and did I mention I leave for Boston exactly one week from today?!?! Yay!!!
