In the spirit of eating down my bar stash I stumbled upon a bar I almost forgot existed.

Do you remember the Jamkrafas rage of last November? I do. I also remember when Abbie ate my free samples. Luckily Megan was lovely enough to send me more, which I apparently forgot about. Ooopppsss…
I’ve had the chocolate flavor one before and I recall it being tasty, but not very filling. The same was true this time. I ate this baby around 3:30 and was already starting to hear my tummy grumble when I left work 2 hours later. I ignored it though and was able to take Abbie to the park for approximately 30 minutes before I just could not take it anymore.
On my drive home I quickly planned this amazing meal in my head. Its amazing how super hunger will inspire some of the best meals.

This was a meal made up of 5 different elements that I layered one on top of another on my favorite star plate.
- Layer 1 – Steamed Kale drizzled with balsamic vinegar
- Layer 2 – Jicama
- Layer 3 – Left over Grilled Eggplant, Zucchini, & Yellow Squash that had marinated in balsamic vinegar
- Layer 4 – Grilled Organic Sun Dried Tomato Chicken Sausage
- Layer 5 – Sprinkle of shredded Parmesan Cheese
Can we say Holy Yum?

After being in the fridge overnight the veggies really had a chance to soak up the balsamic flavors. The chicken sausage added a great hearty flavor to the overall dish, it added a little savory to balance out the sweetness of the veggies.

The best part was since this meal was mostly repurposing left overs, this whole meal took 10 minutes to throw together. The most effort I had to put into it was steaming the kale and grilling the sausage in the George Foreman.
Did you know today is National Vanilla Ice Cream Day? Sounds like a great day to celebrate to me!
I celebrated with a makeshift Hot Brownie Sundae.

I heated up a Vitalicous Vita Brownie and topped it with a spoonful of Vanilla Ice Cream. Nom Nom Nom

Now I’m off to pack and get to bed super early so I can get a killer run in the morning.
I’m a little bummed because I just did laundry and realized one of my brand new running shirts is missing. What makes it worse is I only got to wear it once. *sniff*sniff
