Bowl O Rama

When I asked Derek what he wanted me to make for dinner tonight he suggested ‘pasta with a side of pasta.’ The boy loves his pasta!

Now, I am not the biggest fan of pasta, in fact its one of my least favorite dishes out there, but every once in a while the mood strikes me to make a killer pasta dish and lucky for Derek tonight just happened to be one of them.

For me the key to making a great pasta dish is lots of extras thrown in with great flavor. This dish was a great success in my opinion. :)

I simply roasted a collection of vegetables that included Eggplant, Brussel Sprouts, Carrots, Apple, and Mushrooms in the oven at 400 degrees for 20 minutes. While the veggies were roasting I pan seared some chicken on the stove top with onion, garlic and fresh parsley and boiled some whole wheat rottitini. Once every thing was done I combined it all in a dish with pasta sauce and ricotta cheese, then baked at 375 for 15 minutes.

The results were very tasty if I do say so myself. It always lets me know a dish is a success when both my twin bro and Derek go back for seconds. :)

With the pasta bake dish I had a Massaged Kale Salad.

The boys weren’t into the kale so I had Garlic Bread as well.

The garlic bread was very easy. I simple sprayed a hoagie with olive oil and sprinkled with garlic and parmesan cheese. I wrapped the bread in aluminum and put it in the oven as I baked the pasta.

After dinner the three of us met my sister, Kelly, her boyfriend Anthony and his cousin David for some bowling fun.

It’s pretty amazing how expensive bowling is on a Saturday Kelly and I had to call around several different bowling alleys to find one that we considered reasonably priced.

At least the beer was cheap. Our gang split a couple of pitchers of Amberbocks during our games.

I had 3 of the tiny cups which was probably equivalent to a pint.

I bowled one really bad game and then a really good one, but overall had a great time. :)

It has been fun having my twin bro in town for the weekend. He leaves Monday for a month’s rotation in the Keys and who knows when we will have a chance to hang out with him again. At least I have my lil sis in town no permanently to keep me company. :)

Derek and I just rented Yes, Man and are settling in for the night. Let’s see how long I can stay awake. Good night!

Universal is Now a Family Affair

I learned a very important lesson this morning… do not try new raw foods and plan to run 10 miles the next morning.

The very rich, nut based food did a number on my stomach. Let’s just say I was able to get some reading done in the bathroom very early this morning and my 10 mile run turned into a 5 miler with a couple of pit stops included.

I continued to feel bloated the rest of the day. Derek said it didn’t bother him at all. Ughh…

Despite the tummy troubles, my appetite was still apparent and accounted for.

After my disappointing run I came home and my Derek, my twin bro and I a batch of Whole Wheat Waffles before we headed out for the day.

I topped my waffle with Plain Oikos Yogurt, Strawberries, Blueberries, and a drizzle of syrup.

They were very tasty and having something new in my stomach did help.

My twin bro had called me last night around 6:00pm asking what my plans were for the weekend, when I told him Derek and I were planning on heading to Universal in the morning he stated he wanted to go and drove up from Miami. My Mom then discovered my brother’s plans and before I knew it our Universal adventure became a family affair. :)

I was very excited when everyone took advantage of the special at Universal right now where you can purchase a 2 park pass good for the rest of the year for only $99. Now they can come back any time they want until the end of December. Yay for annual pass buddies!

We are already making plans to come back together when the crowds die down in October and then when Christmas season rolls around.

By the time we actually got in the park and had rode a couple of rides i was feeling snacky. I pulled a Plum out of my bag to snack on.

We stopped for lunch around 1:00pm and I happily pulled out the lunch I packed myself this morning.

Before we left the apartment I made a delicious wrap of Almond Butter, Spinach, Grated Carrots and Craisins. I am obsessed with this combo at the moment.

My sister, Kelly, and I are trying to perfect the wrap to a tee and I think we both agreed grating the carrot before adding it to the wrap adds the best texture and chewability. ;)

With the wrap I brought along a bag of Mrs. Vick’s Jalapeno Pickled Chips that have been in my pantry for a while.

They gave a nice spice to my lunch.

I got a kick out of the giant turkey leg my twin bro and Dad shared.

I remembered when I was little we used to go to Disney and my Dad would buy two Turkey Legs for the 6 of us t share for lunch. I stole a piece of theirs today and it brought back a lot of good memories.

For dessert Kelly pulled out 1/2 a Cinnamon Scone that she let me steal a bite of.

It was Hot, Hot, Hot at the parks today, so we took full advantage of the water rides.

And no Islands of Adventure is complete without the traditional funny Spiderman glasses photo.

I felt like a bottomless pit around 3:00 and pulled out a Simply Harvest Bar to tame the hunger.

The bar helped, but it didn’t stop me from indulging in some TCBY with the family once we left the parks.

I had a small Peanut Butter/ Vanilla Swirl with Reeses Pieces on top. I can never resist the TCBY in CityWalk right outside Universal.

We have big plans of bowling tonight! It should be fun. :)

A Raw Experience

Ughh… I am soo tired of our daily summer afternoon thunderstorms. Can’t a girl catch a break? It was so beautiful before the rain hit too! I came home from work around 4:00 this afternoon (I <3 Fridays!) and immediately did level 1 of the 30 Day Shred. I really enjoy the combination of running more ยป
