Puffin Munchins

There is something about little sample bags of my favorite treats that put a smile on my face.

I stalked up on quite a few samples of Peanut Butter Puffins after my marathon in San Diego and I love the convenience of the pre-portioned serving size. This morning I just grabbed the bag from my stash, threw it in my purse and was out the door.

It made the perfect mid-morning snack.

I also love the $1.00 off coupon that is printed on the back of the bag.

When it is time to restock on these peanut butter balls of crunch, the $1.00 off will come in handy.

Lunch today was simple and quick. It seems like the majority of my lunches always are. :)

I reheated the other half of my Mellow Mushroom Mega-Veggie Pizza from Wednesday night.

This was originally sliced into 2 slices, but I trimmed it to 4 so I felt like I was eating more.

With the pizza I had a refreshing hunk of Watermelon.

For some reason the combination of pizza & watermelon just screamed summer for me today.

I’m hoping the beautiful sunshine outside holds up for when I get off of work this afternoon. Abbie is BEGGING to be taken to the dog park. How could you deny that pitiful face?

Small World..

I wanted to share with you an e-mail Caitlin, Jenna and I received from one of my favorite readers, Gina, last night. This brought a smile to my face. :)

Hello! I wasn’t exactly sure how to let you girls know this, so I figured it would be best to email you :-)
I went to a Team In Training information meeting last night and ended up talking with one of the girls from the Central PA chapter. She asked how I found out about TNT and I told her read these blogs that were about food and healthy living who were also involved in TNT and lived in Florida. No joke, she looked at me and said, are you talking about Jenna, Meghann, and Caitlin?! I couldn’t believe it! What are the odds?
Just thought you would like to know :-) She said she tried to get into the Healthy Living Summit but had problems with the site, so I told her I would take lots of pictures for her.

Seriously it is a small world. It’s really good to hear when ever we’ve inspired someone to sign up for a good cause. Good luck with your fund raising ladies!

A New Breakfast Bowl

After drinking some seltzer water to calm my tummy down and a good night’s sleep I was up roaring and ready to go for my longer run this morning. I was itching to do some distance and planned a 7 mile run before work.

The whole 7 miles I felt great. I kept it at an easy pace and finished in 1:08:36. I just went with the flow of the morning and took the time to hash out life in my head. I always find the ‘thump, thump, thump’ of my feet on the pavement so soothing and therapeutic. If I had the time I felt I could have kept running for hours.

I am crossing my fingers I can squeeze a 10 miler in this weekend. After taking a break from the longer distances since my marathon, I forgot how much I really enjoy them and that great runner’s high I get afterwards. Even now at my work desk I feel calm, cool & collected thanks to my morning run. :)

I hit the bottom of my almond butter jar yesterday.

Normally this would have been a heart breaking tragedy, but ever since I saw Heather’s Almond Jar Oats the other month I have been waiting to get just the right amount to try it out my self.

Last night I made a muesli mix of

  • 1/2 cup Hot Multigrain Cereal
  • Almond Milk
  • Plain Oikos Yogurt
  • Chia Seeds
  • Dried Goji Berries
  • Crushed Almonds
  • Unsweetened Shredded Coconut

I then placed the mix in the Almond Butter Jar and let it sit over night.

I know it doesn’t necessarily look appealing, but trust me it’s good. I like my muesli extra thick, but if you prefer it thinner just add more milk.

I did add a Kiwi and some Blueberries to the mix as well. I think that helped make it prettier. :)

The results were amazing!! I loved scraping a little almond butter off the side of the jar with each bite. If you’re getting to a bottom of a jar I would suggest trying this out yourself.

I polished the jar off, not leaving any almond butter to waste. :)

Now all I need to do is restock my almond butter supply. I have a fridge full of various nut butters but there is something about my Whole Foods Chunky Roasted Almond Butter that I always gravitate too. It’s too good!
