Morning Parfait

I totally passed out in front of the TV last night.

I woke up around 1:00am to an infomercial playing on the tv, drool running down my cheek and Abbie curled up beside me. When will I ever learn that just resting my eyelids during commercials never works. When ever I mess with that logic my eyelids end up resting not only through the commercials but through the rest of the program and any that follow. I guess my eyelids just really needed the rest.

If you subtract the 15 minutes it took me to make it to my real bed after I got off the couch and add on the 3 hours I was ‘resting my eyelids’ on the couch I was actually able to get a full 8 hours of sleep last night. I awoke refreshed and ready to run an easy 4.0 miles.

The weather was perfect this morning for running. It was drizzling a little when I started and the foggy mist really cut the heat down. The 4 miles was a breeze.

The idea of a pretty parfait has been a breakfast idea in my head for a while so when I was done showering I pulled out my containers of MixMyGranola and Oikos Vanilla Greek Yogurt and got to work.

I layered the Vanilla Oikos, a sprinkle of a my Meg’s Jammin Mix and Chocolate is for Lovers Granola, Strawberries and Blueberries until I reached the top then added a Cherry for fun.

The parfait was a really fun way to eat one of my favorite combinations. The best part was that with each spoonful I automatically got a little bite of everything with out any need to make a big mess mixing it all up.

I love your breakfast. I am a person that eats with my eyes first and that is a beautiful creation.
I wish that I could join in the fun at the Summit. Unfortunately I was too late to get my hands on a ticket. And I really can not afford to spent over $100 dollars on one now. It sounds like you guys have some great foodie activities lined up.

we do that all the time! We fell asleep last night trying to watch Top Chef Masters, but of course, I missed the ending since I fell asleep 🙁

I am infamous for falling asleep while watching TV. They say your brain might as well be asleep, but I actually do it….

Ummm, I am the Queen of knodding off on the couch. I, like you, think to myself – I’ll just rest for the commercial, and then Geoff always has to nudge me off the couch like two hours later. I don’t know what it is about the couch that makes it such a good place to sleep!

I had a quick question for you . . . you see when i read your reviews about vitatops i knew i had to get some!
Sooooooo . . . i placed an order but was wondering if you need to place them in the freezer? Will they go bad if you don’t???

Isn’t it crazy how sleep truly does make a big difference in the quality of our runs?? Or maybe it’s not so crazy after all… it makes complete sense but so frequently I think that I can get by on little sleep and then I wonder why the quality of my runs suffers!

I tried to make a parfait a few times but it got so messy because I didn’t have the right kind of glass for it, the delicious-looking parfait of yours just may be the motivation I need to buy a parfait glass 🙂

Such a pretty breakfast! I love doing stuff like that but I sometimes feel like it’s “too fancy” to make for myself when I’m just hanging out alone in my apartment… but it’s not! Making things pretty and appetizing is important. Well done!

pretty parfait! and i do the exact same thing when i rest my eyes during commercials. that’s pretty much a nightly routine of mine, haha.

I can’t tell you how excited I am to have won Caitlin’s Golden Ticket! I have been reading a bunch of healthy eating/cooking/living blogs for the past few months now (yours is def one of them!) and I have finally decided to start my own.
