Margherita Pizza

Man, these afternoon showers are really putting a damper on mine and Abbie’s afternoon walks. We tried twice this evening to get a good walk in and both times it started drizzling less then 5 minutes into it. I can already tell Abbie is ready for summer to be over. lol

When I purchased the Tomato, Mozzarella and Basil on Monday my head was full of ideas on how to incorporate the fresh ingredients into tasty dishes. Last night I made a Caprese Salad and tonight I went with a fresh Margherita Pizza.

I prepared the crust the night before using Jenna’s recipe for The Best Pizza Dough. This afternoon I split the dough in half, put one half in the freezer for another day then rolled the other until I got a nice thin crust that I topped with fresh tomato, mozzarella and basil.

The pizza came out great!!!! I usually love my pizza piled high with veggies, but sometimes the simplicity of tomato, mozzarella and basil is all you need.

With my pizza I enjoyed the other half of my peach from breakfast, a red plum and some cherries.

Love all that red fruit! :)

I tried something for dessert that has bee my head since I received the package of Vitalicous Tops last week.

That’s right! 30 seconds in the microwave then a small scoop of Coconut Ice Cream on top. Complete perfection! I ate it slowly as I could but at the end my tounge took over and I licked that plate clean!

This afternoon I did have a wonderful snack of homemade trail mix.

In the tiny cup I had

  • Raw Cashews
  • Dried Mango
  • Dried Pineapple
  • Dark Chocolate Covered Edamame
  • Awesome Almonds
  • Peanuts

I love throwing random items together in the morning for quick and tasty trail mixes.

Yum, i love trail mix!! I want to start making my own concoction, but I always buy the Trader Joe’s mix with chocolate covered espresso beans- so good.

Thanks for the shout-out sister! Love the ice cream on the vitatop. Looks delish! I bet Abbie was happy to get away from tail biting Oliver. She seems pretty peaceful in that pic.

That pizza looks awesome! I’m going to have to try Jenna’s Pizza dough recipe. There is a really complicated WW pizza dough recipe in the Essential Eating Well Cookbook. Jenna’s seems ten times easier.

I love making homemade pizzas … I need to keep it simple and sweet and try that out though ;)

That pizza looks so good. Is the dough easy to make? I agree that sometimes simple is best. If the ingredients are tasty and fresh, then Margheritas rule!

Love your blog, the pics are so great and the food very inspiring! Your dog is so cute! I checked out your sister’s blog…and then started getting a little creeped out…you, your sister, and I a lot of similarities…
Just to start, I have a dog named Abi, a cat named Oliver…and I am moving to Tallahassee for grad school in Aug. HA! I will definately be keeping a close eye on you two, keep up the good work!!
