Bare Bones

I think I overestimated how much food I had in fridge for this week. It’s only Tuesday and I feel like I am already at bare bones. I have plenty of fruit, yogurt, & spinach, but not much else. Time to get creative.

With not much to work with I was quite proud of the meal I managed to put together for dinner tonight.

The meal required use of a lot of the last bit of ingredients I had. Including my final sweet potato onion which I roasted along with a zucchini and apple for 20 minutes at 415 degrees.

I topped the roasted veggies with the last of a can of chickpeas, the final scrapings from a jar of marinara sauce and the final shreds of the last bit of jalapeno cheese.

With 1/2 of an Italian Pita torn around the edge, this meal was perfect! Marinara sauce is and will forever be my no fail favorite meal to make. Yum!

For some reason I still had two large zucchinis at the bottom of my vegetable drawer. I took inspiration from Bobbi’s recent Zucchini Bread adventure and made a batch of Zucchini Muffins from this recipe on Cooking Light.

I followed the recipe exactly, but added crushed walnuts and chopped dates to the mix. They ended up very moist and flavorful. Yum!

I had 2 of the mini muffins fresh out of the oven for dessert. Perfect.

I wanted to say a big Thank You for all of your wonderful comments about my past cruise photos. It’s so strange I never think I look that different until I start looking through old pictures and see the change. I still feel like the same Meghann, just a healthier happier version. :)

A Belated Review

I have been slacking on my product reviews lately! At one point I was being sent way too many products at once and I decided to take a break from all the reviews. However, this morning I was digging in my cabinet for some snacks and found s few forgotten gifts. After my sweet tooth gave me the nudge I grabbed a bag and headed out the door.

This bag of Sensible Portions Apple Cinnamon Whole Grain Crisps is part of a vast sampling of Sensible Portions products I received a couple of months ago.

I have to be honest when I say I shied away from sampling any of them due to the erie resemblance to the Quaker Rice Snacks. In my head I just kept thinking they were another processed diet snack that would leave me feeling empty.

Upon closer examination I was pleasantly surprised by the relatively simple ingredient list to the crisps.

No funny names and the whole bag only had 3 grams of sugar. Not too shabby.

As I predicted they would the crisps were very cinnamony and very good. They reminded me of my believed Cinnamon Twists from Taco Bell that I used to order when I was little. They would make a great dessert, but as a snack it was not very substantial. They were light like air and not very filling. At least they tasted good. :)

Lunch made up for how unfilling my snack was. ;)

I have been dreaming about this Buffalo Tempeh Burger all week!

I simply broiled a piece of tempeh until it was crispy, doused it in buffalo sauce then topped with a slice of Swiss Cheese and Spinach. All of which I sandwiched between a Homemade Multi-Grain English Muffin.

Wow! This was just what I was hoping it would be! The buffalo sauce added an extra spicy kick to the ‘burger’ and the coolness of the cheese was able to keep my mouth cool at the same time. Yum, Yum, Yum!

On the side I had a small Pickle

And a serving of left over Jicama Rice Salad.

The salad had all night to soak up the yogurt dressing so it was extra delicious at lunch. :)

The Dark Chocolate Edamame had been staring me down while I was putting things away in the fridge after lunch.

Cruise Ramblings…

I admit it I have been on ALOT of cruises. The one this weekend will actually be my 6th! With so many ports within driving distance, cruises were always just an easy vacation for my family that kept everyone happy the whole week.

I was a little bored this morning and decided to take some time to review the pictures from the most recent cruise I went on in the summer of 2007. My family and some family friends set sail out of Miami for a 7 Night adventure to celebrate mine, my twin bro’s and our good friend April’s graduations from college the month before.

This just happened to be the same time when my weight was at its highest. And though I had a blast on the cruise, looking back at the old pictures reminds me how far I have truly come in the last two years.

As you can tell there was a lot of Drinking/ Eating/ Partying etc. done on this cruise. Believe me I plan to still do those things on the cruise coming up, but I also plan to do it all in moderation. I just have to remind myself that I don’t need a soft serve ice cream before and after every meal or that midnight & 2:00am pizza probably will not agree with me later.

I also can not wait to run on the sea or take advantage of a fully gym I do not have the luxury of at home.

I fully intent to embrace this cruise with the same healthy living attitude I have developed in the last year and a half. It’s still going to rock and I still plan to have my pants fit at the end.

I just can’t wait!

Trying the Grass
