Working Hard for the Money

Boy did that morning just fly on by! I can’t believe it’s almost 2:00! I hope the rest of my afternoon feels the same. I am ready for the weekend fun to begin. 🙂

The pancakes held me over really well this morning, but when I did start feeling snacky around 11:00 I had a serving of TJ’s Peanut Butter Pretzels.

I was out of any type of spinach or lettuce for the salad I was hoping to have for lunch, so instead I made a deconstructed salad. It was a wonderful platter plate filled with all the goodies I was hoping to incorporate in my salad.

I had tomato slices, cucumber, carrot, a pickle, blue corn tortilla chips……

….grapes, cantaloupe, broccoli & mini cinnamon twists.

Of course no platter plate is complete with something to dip it all in.

I had the last of a can of black beans with verde salsa on top ad well as my new favorite mix of hummus & tomato chutney. Yum!

*Please bare with me as I still try to sort through registration for the Healthy Limiting Summit, I am trying to tie up some loose ends to create the official attendee list! 🙂

great lunch – i love plates like that.

This restaurant here brings you crostini with hummus and this amazing tomato jam. It is so good together.

I would LOVE to try those TJ peanut butter pretzels. Too bad they don’t mail order. Also, your deconstructed salad looks delicious. All those goodies on one plate plus dipping sauce. Nirvana.

I couldn’t help but laugh when I read “Healthy Limiting Summit”… only b/c more people want to go than there are tickets for! lol Freudian slip 🙂

I’m always out of salad and never know what to do with the veggies I was planning on eating! I usually forgo them but you just reminded me I should just eat them anyway…duh. Haha. Thanks for the reminder!

Your lunch looks awesome, great variety! I’ve been looking for those peanut butter pretzels for ever, they don’t have them at my closest TJ’s!
