Boy did that morning just fly on by! I can’t believe it’s almost 2:00! I hope the rest of my afternoon feels the same. I am ready for the weekend fun to begin.
The pancakes held me over really well this morning, but when I did start feeling snacky around 11:00 I had a serving of TJ’s Peanut Butter Pretzels.
I was out of any type of spinach or lettuce for the salad I was hoping to have for lunch, so instead I made a deconstructed salad. It was a wonderful platter plate filled with all the goodies I was hoping to incorporate in my salad.
I had tomato slices, cucumber, carrot, a pickle, blue corn tortilla chips……
….grapes, cantaloupe, broccoli & mini cinnamon twists.
Of course no platter plate is complete with something to dip it all in.
I had the last of a can of black beans with verde salsa on top ad well as my new favorite mix of hummus & tomato chutney. Yum!
