Tasty Dinner & A Winner!

For all the Gossip Girl and former Laguna Beach fans out there I have a new show for you: NYC Prep. It premiered last night on Bravo and is a reality show that follows around several well off NYC Prep Kids. Hormone driven kids with lots of money let lose on NYC, what’s not to love? πŸ™‚

While discovering my new guilty pleasure I put together a tasty dinner thanks to Caitlin’s idea for Sweet Potato & Black Bean Balls.

These were so yummy and easy to make.

My version were made up of

  • 1/2 cup Black Beans
  • 1/2 baked Sweet Potato
  • Whole Wheat Bread Crumbs
  • Onion
  • Flax Seed
  • Spoonful of Tomato Chutney

I combined all the ingredients in my food processor, formed three balls then baked in the oven at 375 degrees for 10 minutes.

I plated the balls on a bed of spinach and topped them with verde salsa.

I had blue corn tortilla chips on the side that acted as my utensil for eating the balls.

It was the perfect combo. πŸ™‚

Plus some juicy cantaloupe to complete the meal.

After finishing my meal and taking Abbie for a nice walk around a local park, I dug in the freezer for a sweet treat.

This is a serving of Coconut Milk Mocha Almond Fudge Ice Cream topped with a tablespoon of Chocolate is for Lovers Granola Mix. This was perfect after walking in the heat.

And just as I broke into my snack a tad earlier this morning, I did the same this afternoon. Boy have I been hungry today! Luckily the almond butter & carrots I had brought were a great hefty snack that managed to fill the missing void.

I totally just made those for last nights dinner for me and Anthony. They are good! I rolled mine in flax seed like Caiti did. Anthony liked them. He ate them as a side with Chicken and I ate mine as the main dish.

Hmm well I loved Laguna Beach and The Hills.. but is Gossip Girl really that good? I’ve been looking for a new show for the summer and I’ve heard a few people talk about that one but I wasn’t sure if it was worth it….

I loved Laguna Beach and Gossip Girl- I will have to check out NYC Prep- sounds great!

Oh, that show sounds just up my alley. My fiance totally makes fun of me because I am 31 but love all those teenager shows. I can’t help it!

I looooove the Bravo reality shows! I saw NYC Prep and am just shocked at how these kids act like they’re 29 years old! Do I sound like a total old fart or what?!
