Another Shot at Fame

For some reason my stomach is grumbling none stop today. It’s funny I can the same level of activity and eat the same foods, but some mornings I can go until 11:00 with out a snack and others I’m breaking into my snack at 9:30.

This morning it was 9:30.

These Chocolate Bunny Grahams are courtesy of Danica and were a wonderful sweet treat.

Lunch centered around the wonderful chicken left overs from yesterday’s dinner that never had their shot of fame due to Ecto’s immense jealousy and anti-chicken post movement it started last night.

Last night I dipped the free range, organic chicken tenderloins into a bath of egg whites and then a coating of homemade breadcrumbs I made with stale rye bread. They were great last night and perfect as a salad topper today.

Also in the salad:

  • Spinach
  • Radish
  • Cucumber
  • Pumpkin Seeds
  • Tomato
  • Green beans
  • Okra
  • Grapes
  • Jalapenos
  • Drizzle of Annie’s Cucumber Yogurt Dressing

On the side a piece of Rye Bread.

I can not believe the enthusiastic response for the Healthy Living Summit registration giveaway. Seriously Jenna, Kath, Caitlin, Tina, Heather and I are jumping up and down behind the scenes in excitement.

Love how you breaded the chicken – great way to use up stale bread!

Congrats on the response to the summit! I would go, but I think I am about 15-20 older than the rest of you guys! 😀

I totally hear ya! some days I can eat very little and other days I want to eat everything I see/can think of.

I wish I could come to the summit.. but I’m pretty sure it would cost me $$$ in airfare, hotel, etc. 🙁

My hubby loves breaded chicken, I may have to try it your way. As for the summit… I would LOVE LOVE LOVE to go, but Boston is REALLY far from San Diego. You guys need a West Coast Summit.

That salad looks really good, especially with the cucumber and yoghurt dressing. My hunger levels are never the same from day to day either – bodies are strange things!

I find the same thing happens to me! Sometimes my oatmeal keeps me full longer than others, and I’m not always sure what to make of it!

Now, I am really bummed to have missed the dinner post – sounds delish! I bet there was BBQ dipping sauce involved… 😉

I am MORE bummed that I cannot be in Boston Aug. 14-15. I hope that it is such a smashing success that you all want to do it again soon… 🙁

I’m new to blogging, but that summit sounds fun! Wish I wasn’t’ in the midwestn and stuck with only 5 days of vacation left for the whole year!

I so agree with you on the changing hunger levels. Yesterday I didn’t even want to look at food until 7, and today I’ve been constantly hungry. So strange.

ohhh yummy…faux chicken fingers! I actually can’t stomach the real thing…the whole mystery crispy stuff creeps me out…i just moved back home to the west coast and i’m still trying to adjust my eating schedule to the time difference! my family eats at 7:00 west coast time which is 10:00 p.m. east coast time..it is IMPOSSIBLE not to pick at a million things while waiting for dinner.

YUM, I love Annie’s chocolate grahams! Annie’s also make this big mixed box of the chocolate, honey, and chocolate chip ones– the best.

Awww Bummer I was on a plane to Las Vegas when you had this post 🙂 Glad you liked the bunnies – they are fantastic with almond butter and peanut butter 🙂
