All Caught Up

Abbie had the right idea all afternoon.

The only time she budged from that position was when I fed her dinner and let her outside to potty. Otherwise I think she is in full recovery mode from all of her hiking adventures last week. :)

I am so glad we came back home yesterday instead today. It was nice to have the whole day to myself. I shopped, I unpacked, I cleaned and I did all the necessary prep work for the upcoming week. It was the perfect Sunday.

In the process of cleaning I got a little hungry so I filled a 1/2 cup bowl with trail mix I made of a little pinch of anything that looked appealing in my pantry or fridge.

My Trail Mix had

  • Peanuts
  • Dark Chocolate Covered Edamame
  • Raisins
  • Cinnamon Puffins
  • Grapes

The best part about trail mixes is you can subdue a ton of cravings at once. All you need is a little bit of everything and you’re set.

I debated in my head all afternoon what I was going to have for dinner. The Diners, Drive Ins and Dives Marathon was not helping either. After watching so many of those shows I was craving burgers and fried food. :)

So I improvised and created my version of those fabulous rich foods.

I give you my version of the Lentil Sloppy Joe

I don’t like to make things complicated when it comes to cooking. I discovered back in college that to make a ridiculously easy, incredibly tasty sloppy joe all you need are these three simple ingredients.

Equal parts of BBQ Sauce, Ketchup, & Honey Mustard is the ultimate sloppy joe sauce. Yum!

All I did was cook up some lentil beans with onion, carrot, okra and jalapenos then topped it with the above sauce. It was quick, easy and extra delish squished between one of my ultimate english muffins from NC.

On the side I baked Zucchini and Carrot in the oven until it was soft simply seasoned with S&P.

To round out the summer meal I also had some fresh cantaloup that I had picked up at the Farmer’s Market earlier today.

To help cool down from the heat I scraped the last of the Edy’s Slow Churned Samoas Ice Cream from the container and topped it with fresh strawberries.

Soooo refreshing, but I admit a tad freezer burned.

I can not believe I have to go back to work tomorrow! I have been too scared to check my work e-mail, I’m afraid of what might be waiting for me after a whole week away. The good thing is I only have one full week of work before I get another 4 day week and another vacation. I am seriously digging all the travels this summer. I am going to be sad when they’re all over. :(

Back in the Florida Heat

I was not messing around in my post this morning, it is HOT outside! It’s already over 100 degrees out in the high Florida sun and unfortunately staying outside is just not an option for long periods of time.

Abbie and I did brave the heat wave to head out to the local Farmer’s Market, but Abbie spent the majority of the time rolling the shade, refusing to step out in the sun.

Thank god for my great new short hair cut in this heat!

I discovered another versatile do with my hair this morning.

Yes, i still have the power to make itty bitty french braids. :) For those of you who have e-mailed me wanting to take the plunge with cutting you hair short, but are afraid that if you cut your hair that you won’t know what to do with it. The above is just exhibit A. ;)

Walking through the market I had my obligatory sample treat.

To help cool myself down I had a large Unsweet Tea with Lemon.

I arrived right as the market opened at 10:00am so I had a great selection of fruit and veggies to choose from.

I was so excited to fill my fridge that I came home with as much fruit that my bag could hold.

  • Cantaloup
  • 3 Zucchini
  • 1lb Okra

  • 4 Apples
  • 6 Peaches
  • 4 Kiwis

Then I made the mistake of holding off on lunch and heading to Publix with a little hunger that developed into full scale hunger. Of course everything in the store looked great and so many ideas were floating through my mind on what I could make.

I may have spent a tad much more then intended, but atleast my fridge doesn’t look quite so sad anymore. :)

Once everything was put away I pulled out anything that looked good and made a Hugh Jass salad.

That really hit the spot!! It was so fresh and so good. The perfect meal on a hot summer day.

Now all I need to do is stop procrastinating and clean up my messy apartment and unpack a weeks work of dirty clothes. :)
