Last Day in NC

Boy am I going to miss blogging from this location.


Sadly today was our last full day in NC. πŸ™ Tomorrow morning we are packing up and heading back down south to join the real world and all the responsibilities that come with it. Boooo…..

I can promise you though, we did take full advantage of our last day up in the mountains. πŸ™‚

Starting with a great breakfast this morning.


After leisurely playing online and announcing the Healthy Living Summit (woo hoo!) I chowed down on 2 scrambled eggs, a slice of Sourdough Wheatberry Toast with Rhubarb Jam and fresh Strawberries & Blueberries on the side.

My family are all early vacation risers and I am proud to say we were all on the boat ready to water ski before 8:00am!

It gets a little chilly on the water that early and I stayed bundled up in a nice warm towel before I took my turn.


Once you’re in the water it’s fine, but just thinking about the coldness makes that first go almost impossible to follow through on!


Mid-morning my sister and I decided we had enough boat action and much preferred to spend our time on the dock basking in the nice warm sun.


I passed my First Marathons book on to my sister and I am happy to report it is really getting her excited about Disney.


I told her to pass the book along to a friend who is about to run their first marathon and I hope it keeps getting passed on and keeps inspiring other runners that they can achieve the impossible. πŸ™‚

The rest of the fam enjoyed driving by us on the tube.



When it came time to make lunch I was very excited when I realized I had the essentials to make one of my favorites.


Sweet Potato topped with Black Beans & Onion is definitely an all time favorite.


You can’t see it, but hidden underneath the black beans are two tiny marinated mozzarella balls. πŸ˜‰

On the side I had some boiled fresh green beans


and a whole peach.


My Sister brought out canned pineapple rings, so I added one to my plate as well.


And for those curious minds that have been asking, my family feasted on Kiabalsa, Green Beans and Black Beans.


My sister did have the same thing as me in wrap form, but most of the time our meals always differ slightly from everyone else. As a whole my family is very open minded about food and never make any comments about us eating something different. In fact, they have come to expect it and respect us for it. πŸ™‚

After lunch we were reminded yet again that using GPS system is pointless in the mountains. We were led off the beaten path to a gravel road that took us up scary turns up to the top of a middle of no where mountain. haha The funny part is this was not our first experience with this. I guess we will never learn.

Eventually we did make it to our final hiking trail of the week that took us up to High & Triple Falls.


High Falls was a beautiful waterfall that stretched high above our heads.




Abbie enjoyed swimming in the shallow pools.

I was kind of digging the messy waves. πŸ™‚

At the waterfall I dug into a Salt Water Taffy.


We then hiked down to Triple Falls, which was essentially three waterfalls stacked on top of each other.



We also nearly gave my Mom a heart attack when my Dad, Brother and I went for a little swim at the base of the waterfalls.


I promise we were not the only ones swimming in the water and my Mom was just being a wee bit paranoid.


I’m going to miss hiking to waterfalls!!

The hike back up the hill was quite a climb. When I got back to the car I had a couple of orange slices that were being passed around the car.


On the way back to the cabin we drove through Brevard, NC for the upteenth time and for the upteenth time my Dad pointed out a soda shop he was dying to try. Only this time we encouraged my Dad to stop and have an end of vacation treat.


The old fashion soda shop was a cute small town ice cream shop that was definitely worth stopping to check out.


I was definitely craving some ice cream and happy to see so many great options.


At first I tried the Tart Honey Yogurt.


It was really good and tart. I was contemplating ordering a cone of it when my brother sampled the Peanut Butter Cup Ice Cream and it looked to good to resist.


I had a sample myself and ordered a small sugar cone of the peanut butter goodness.


I was VERY happy with my decision and enjoyed every last creamy bite. It was a great sweet note to end vacation on. πŸ™‚


We came back to the cabin and did some much needed relaxing, before making a wonderful dinner trying to use up all the fresh ingredients we still had in the condo.


My Dad and Aunt had a london broil cooking in a crock pot all day.


I’m not that big of a red meat fan so I just had enough to get a taste of it.

For the sides I cubed and roasted an acorn squash at 415 degrees for 20 minutes. I also had some tomato and green beans.


I like my squash very simple with just salt and pepper. I thought it was mighty tasty.

While in Brevard we stopped at a local bakery and picked up a loaf of German Seeded Rye Bread.


It was a very dense, hearty bread that had a very subtle molasses flavor to it. I loved how dimensional this bread was on my tounge and how so many different seedy flavors showed through.

Now it’s time to say good bye to the beautiful cabin I have called home this past week. It has been a great vacation and I hope you all have enjoyed reading about it. I wish we had just one more day to keep soaking it all in! Oh well…. repacking my suitcase awaits!

It’s always so sad when vacations end. I love that you guys still vacation all together, even though you’re “grown up”! The mountains will still be here next year for you guys to come back to:)

I hate the end of vacation blues.

I just finished a carton of Edy’s Tart Honey Yogurt!! Soooo good! Only 100 cal. for 1/2 a cup too! Even though you didn’t pick it today, you can still probably find it in your grocery store back home. πŸ™‚

I’ve enjoyed being on vacation through your posts this week!

You should write an inscription in the First Marathon book and have everyone who reads it and runs a marathon continue the tradition and pass the book on – that would be cool!

I love the way you still have exciting home-cooked meals on vacation. I still havent tried the sweet potato and black bean combo but I’m definitely going to!

Sounds like you had a wonderful and deserved vacay!! I love swimming in waterfalls… while it’s typically freezing, the water is always so fresh and clean!
