My little Abbie turns 2 today!
Last year I made her a cake and we had balloons, hats and a little party with the family. I made a cake for the big people as well. 😉
This year however, Abbie has spent the majority of her second birthday locked in the family expedition as we made our way up to North Carolina. It’s the longest trip she has completed in a car and I think she survived the trip pretty well jumping from lap to lap.
Her Uncle Scooby made the trip as well, but he spent the majority of the time napping on the floor. 🙂
We began the day before sunrise with last minute packing and the puzzle of how we were going to fit 5 people, 2 dogs and all the luggage that goes with it into a tiny SUV. Let’s just say it was a VERY cramped trip!
Before we left my Dad wanted to use up the last of his eggs in the fridge so I had 2 Scrambled Eggs, Mango and a piece of Whole Wheat Toast with Apple Butter smeared on top.
This was a great filling breakfast, but there is something about being stuck in a car for 10 hours the brings out the snack monster in all of us. I’m not sure if it was actual hunger, boredom, or the fact that everyone else was munching away, but I spent the whole trip nibbling along.
I started with a 1/2 cup of trail mix I had made back at my apartment.
This was a great combination of Pumpkin Seeds, Peanuts, Cocoa Java Awesome Almonds, Raisins & Kashi H2H.
Then after we crossed into the great state of Georgia…
We broke out the Trader Joe Peanut Butter Pretzels.
My sister was excited to try what I have been raving about for so long. 🙂 I think the whole family enjoyed them and happily munched away.
I managed to just have one small handful.
Obviously my hand was too close to Abbie’s face for her to not resist checking it out.
We stopped for lunch in South Carolina. My family ate a Subway while I pulled out my stash of Roasted Vegetables & Fruit Salad.
The cold roasted vegetables really hit the spot and left my stomach nice and full. With a happy tummy I was able to pass out for a good 2 hour portion of the long drive. 🙂
When I woke up I had a Blueberry Pistachioat cookie and some carrot sticks.
We finally made it to the cabin just after 5:00pm. By this time the dogs were restless and my legs were so cramped from not moving that I was in literal pain. My body was screaming, ‘ Get me out of here and move!’ Aye, Aye Captain!

Our cabin is right on Lake Toxaway complete with a dock and boat.
I find it amusing the first thing we all did was pul out the lap tops and checked out the wi -fi.
Check, It works!! I could not think of a more gorgeous area to blog. I intend to spend any free time I have at the cabin out on the deck.
For starters I had a serving of fruit salad while overlooking the lake.
Now that’s the way to enjoy a meal.
We also could not wait to get on the boat.
The dogs even braved the trip.
Abbie spent the entire ride shaking on my lap and Scooby was on pins and needles trying to find a lap to lay on.
The only downfall to being tucked away in the mountains is the 30 minute drive down the mountain to a grocery store. 🙁 After unwinding by the water we knew it was a trip that needed to be made before night time.
While in town we stopped at the cutest little Italian restaraunt for dinner.
THe menu was full of creative salad pasta and beach dishes. I loved how they advertised the good grains in their pizza dough.
To begin the meal my sister and I split the Marco Salad.
I LOVED the grilled lemon that I squeezes on top with the spiciness of the arugula, but did not care for how drenched in oil the salad was.
We also split the Farm Pizza.
I had 2 of the four pieces.
I liked the cannelli beans smooshed on top in place of sauce, but the pancetta was a bit salty for my taste.
After the meal we were stuffed, which was the perfect time to hit up the local Ingles. We picked up a lot of fresh food to make yummy meals with through the week. We did have quite a laugh when the cashier thought the fresh ground Almond Butter I had purchased was $49.50 a pound instead of $6.99. Turns out the PLU # is 4950, not the price. She was really sticking to her guns until we pulled the manage in to se her straight. 🙂
I am exhausted now and ready for bed. Kelly and I have a boot camp work out planned for the morning and I can’t wait. Yay for vacation!!!
