Stupid Bad Luck

So remember that little bad luck pell I had with digital cameras? Well apparently that epidemic isn’t over.

As I was trying to take a photo of my lovely Apple snack this afternoon, my camera strap got caught in the cabinet and crashed to the ground with the lens out. I had the ‘lens error’ screen of death staring me in the face. Not Good.

Unfortunately the apple was eaten without being photographed and I had to make an emergency trip to Best Buy to talk to my good ole friends at the Geek Squad. My camera should be good as new in 2 weeks *fingers crossed* and until then I have a back up digital camera, that may not be as glamorous as mine, but it will get the job done.

Word of advice – don’t ever trust me with your electronics. ;)

By the time I made it to my parent’s house I was more then ready for a drink. Thank God for Mexican Restaurants and Mexican Beer.:)

I had a Negra Modelo immediately after we were seated at my parent’s favorite Mexican restaurant right down the street from our house.

For dinner I was not sure what I was in the mood for so I just ordered the same thing as my Sister. I trust her to take the lead.

She ordered the Vegetable Quasadilla.

It was chalk full of Peppers, Onions & Mushrooms with a little cheese.

It was actually really tasty and I devoured the whole thing.

On the side it was the typical Rice & Beans with Pico de Gallo.

I had a bite of the beans & rice and all of the Pica de Gallo.

After dinner I felt really, really full and was in major stomach pain. I started to realize that the awful pain wasn’t just from being full, I think the mexican cheese ripped up my stomach. I felt bloated and completely uncomfortable. I had to walk around Target for an hour and drink some carbonated water to make myself feel better.

Lesson learned. Just because it taste good at the time, doesn’t mean its going to feel good later.

Once my stomach calmed down I had a serving of Frozen Yogurt I found in my parent’s fridge.

The coolness of the ice cream was just what I needed.

Tomorrow we have an early wake up call, so we can head out on the road before the sun rises. I have been told the cabin had WI-Fi so here’s crossing my fingers I will be able to keep up with regular blogging while on vacation.

What Creativity?

When it came to lunch today my creativity went right out the door.

I knew I wanted the Roasted Vegetables from last night, but how to eat them was the problem. Wrap? Nope had one yesterday. Salad? Blah, not in the mood. Pizza? Too much effort. As is with BBQ Sauce? Sure why, not.

I have to remind myself I don’t have to be creative with every meal. Sometimes left overs are great as is. :)

Red Cabbage is also great as is.

I love how crunchy cabbage is and really do enjoy it plain.

I had 1/2 of an avocado that needed to be eaten as well, but I just was not feeling it with the vegetables. I finally has a little bit of creativity on this one, though slicing it and eating it plain did cross my mind.

I mashed the avocado with some salt on a piece of 5 grain toast with Tomato Slices.

My complete meal.

Nothing special, but still flavorful, delicious and certainly nothing to be ashamed of in anyway.

I also had some Dark Chocolate Covered Edamame that somehow went un-photographed. ;)

 

Questions…

I have been contacted by the American Heart Association to help promote their Go Red BetterU program. We all know that heart disease is the No. 1 killer of women, but we should also know how preventable this disease can be with exercise and a healthy diet.

I am probably preaching to the choir here, but a healthy diet and daily exercise really does lead to a longer, healthier life. :)

By helping promote the Go Red BetterU program I have been provided with the opportunity to interview Andrea Baptiste, who some of you should remember from the first season of the Biggest Loser. On the show Andrea was the top female of her season, shedding 65 pounds. She has since kept it off thanks to healthy lifestyle changes.
