Geniuses!

First of all, let me state that the Geniuses at the Apple Genius Bar are in fact Geniuses! After spending an hour with at the Apple store, my Genius was able to clean up my computer and determined why my Ecto program was freezing. Needless to say I am currently happy blogging away again on Ecto. Thank you Genius Bar! :)

It is hard to believe another weekend has come to an end. It is also hard to believe a week ago today we ran 26.2 miles around the beautiful city of San Diego. Boy, how time flies!

As always, I took advantage of my free Sunday as much as I could. After posting this morning I headed to my favorite Farmer’s Market right down the street from where I live.

I immediately got to sampling all of the wonderful goodies everyone had up for grabs.

Abbie and I just had happened to run into my sister and her boyfriend at the market!

Apparently, they recognized Abbie before me. I see who they care about more. ;)

My favorite part of the market is the reasonable price on fresh local produce.

I got a bag of goodies for $5, including a $2 Pineapple!

I was even able to pick up Abbie an early birthday present.

Abbie will turn 2 on Saturday, June 13th and she has been begging for a Seminoles Jersey for a while now. :) She was so cute showing off her seminole pride.

Abbie was loving the Farmers Market, but she was also dying to break free from the leash. The two of us headed to our favorite dog park, so Abbie could run free.

The Fruit & Yogurt combination + all the samples left my stomach full until close to 2:00 when I finally made it home for a light lunch.

I used some of my Farmer’s Market finds to piece together this great sandwich.

I slathered one piece of 5 Grain Toast with Wildwood Hummus and the other with Tomato ChutneyLOVE this flavor combo! – and sandwiched between the toasts is Tomato, Mushroom and Spinach.

With the sammy I had 2 whole carrots chopped and almond butter.

I just can not get enough of this combo!!

After lunch I spent the rest of my Sunday doing a little shopping. Unfortunately on one of my stops I realized my keys were missing! I found them safe in sound on the center counsel of my car. :(

Seeing as my closest spare key was 45 minutes away I was forced to call a locksmith to bail me out. At first I was quoted a $39 service charge and $96 to actually unlock the car, but after a few tears the guy lowered it to $65. I still believe that was wayyy to high, but I was desperate to get in my car. *Note to self must get a hideaway key!

However, my sour mood was quickly lifted once I made it to the Apple store and the Mac Genius fixed all my problems! Well all apple related ones. ;)

The $2.00 pineapple I had picked up at the Farmer’s Market this morning was a key ingredient to my lovely dinner tonight!

Black Bean & Pineapple Enchilada Lasagana

Ingredients

  • 1 can Black Beans
  • 1 cup chopped Pineapple
  • 1/2 small Onion
  • 1/2 can Enchilada Sauce
  • Handful Fresh Cilantro
  • 1/2 cup Pepperjack Cheese
  • Chopped Jalapenos
  • 6 Corn Tortillas
  1. Preheat the oven to 350 degrees
  2. in a mixing bowl combine the black beans, pineapple, onion, cilantro, pepperjack cheese, jalapenoes and 1/4 can of enchilada sauce
  3. In an 8×8 baking pan layer the corn tortillas and black bean combo. I shredded the tortillas while layering them.
  4. Cover the layers with the other 1/4 of the enchilada sauce and a sprinkle of cheese
  5. Bake for 20 minutes.

I had my serving on top of a bed of spinach.

With a dollop of Plain Non-Fat Yogurt on top.

I LOVE the sweet and savory combo of adding the pineapple to the black beans. The fresh pineapple mixed with the fresh cilantro gave the dish such a refreshing taste. I truly love this combo and highly suggest it.

Dessert consisted of 1/2 a Peanut Butter Trail Mix Blondie topped with some Fat Free Cool Whip.

Now, its time to wrap up the weekend and prepare for another work week. Luckily, at the end of this work week I will be heading on a week vacation. Woo hoo!!

My Cycling Adventure

My poor bike Blue has been so ignored lately! Instead of taking him out for a ride in the bright sunshines, he has has been locked up in my apartment while my running shoes got to have all the fun. This morning I knew I had to make it up to Blue and take him out for his longest ride to date: 20 miles!

A great point about heading out on the bike on a summer morning, is the gentle breeze it gives you on the ride. I was able to sleep in to 7:00 and was on the trail by 8:00. With running during this time of year I need to be on the trail before the sun rises to ensure that I am off before the heat is in full swing!

I woke up pretty hungry – I blame last night’s beer – so I grabbed a Mocha-Walla Odwalla Bar to hold me over through the long ride.

This bar had a very strong mocha flavor to it. If you like coffee, then you will like this bar. 

I headed out to Wekiva Trail which is a quick 5 minute drive from my house. After a simple safety check I was ready to roll.

This is actually the longest distance I have ever gone on the trail. It’s an in and out trail that goes a total of 14 miles and each half mile is marked. I got to the 10 mile marker and simply turned around and headed back.

I thought it was amusing that when I paused at the 10 mile marker I whipped out my cellphone to quickly check my e-mail.

Got to love technology’s ability to inform me whose commenting, no matter where I am. ;)

Having only rode up to mile  7 at the farthest before, I was pleasantly surprised on how beautiful and industrialized the rest of the trail is. In fact there was an area to pull off at maker 7.5 where a bunch of bikers were stopping to have breakfast at either the cute Cafe or Panera in the area.

How fun would be to live right on the trail and have the ability to either walk or ride to brunch on a gorgeous Sunday morning?

The 20 miles in all felt great to on my legs and I ended the ride feeling refreshed and renewed. 

When I returned home I was STARVING! Bike riding really boosts your appetite! I dug right in the fridge and made a huge fruit salad of Cantalope, Blueberries, Kiwi, Strawberries, PLain Non-Fat Yogurt and 1/2 cup of Nature Path’s Pumpkin Granola.

The best part was the dollop of Lemon Curd I plunked on top.

The Lemon Curd blended with the yogurt perfectly and gave the whole bowl an extra pinch of sweet & tartness.

Now I have the rest of my Sunday to sit back, relax and enjoy! I am thinking about checking out the local Farers Market and treating Abbie with a trip to her favorite dog park. I love weekends!
