Move It

t’s amazing how great it felt to come home and go for a great walk today after work. I did one lap around the complex with Abbie, then grabbed New Moon and did another. Walking really loosened them up. I am not sure I will be able for a run tomorrow, but I see the elliptical in my near future.

 

I actually tried to spend the least amount of time possible at my desk this afternoon as well. Whenever provided the chance I would walk to a co-worker’s desk instead of sending an e-mail and I printed documents one by one right when I thought to print them, instead of saving them all for one trip at the end. Can you tell I am dying to move around?

During this time I also munched on one of my sample bags of Peanut Butter Puffins.

After my walk I decided to try cooking up a new find from Whole Foods.

The pre-seasoned peanut & ginger tofu was a simple time saver. I baked as normal, but did not have to spend 30 minutes to an hour pressing it as I would regular tofu.

The peanut and ginger bits were actually mixed right into the tofu, instead of just flavored on the outside. I could really taste the ginger, but not so much the peanut. It was really tasty though. :)

 

With the tofu, I had a sweet potato that was dying to be made into something yummy.

I can’t remember the last time I had sweet potato fries. I baked the slices right up with the tofu and they were amazing.. especially dipped in the country bob’s all purpose sauce.

I also had a red cabbage that had been in my fridge longer then I could remember. After a quick google search I discovered for to make Sweet and Sour Red Cabbage all you needed was some vinegar, a little bit of sugar and an onion thrown in for good measure.

I didn’t really follow a recipe here I just added as much vinegar to the pan with the red cabbage that seemed appropriate and sprinkled it with sugar until it tasted right. It really was not that bad. I didn’t cook it long enough so it was still a bit crispy, but I think I prefer it that way. ;)

I just realized there is no green on my plate. Oh well.

 

For dessert I pulled out a Turtle Mountain Raspberry Sorbet Bar.

These are sweetened with agave nectar instead of sugar. I was expecting something hard like a fruit bar, but instead it was mushy and melted instantly in my mouth. Yum!

 

Unfortunately my Mac is still giving me trouble. I have decided to blame my Ecto program failing on my Mac being slow in general. I purchased Apple Care with the laptop, so I have an appointment with the Apple Store’s Genius Bar on Friday. Cross your fingers they can figure out what’s slowing it down!

New Phone

My new phone came in the mail today! I ordered it last night and it made to my desk before lunch time, got to love those overnight shipping promises. :)

I had been planning on getting a new phone anyways, the death of my previous one just prompted me to get one that much sooner. Unfortunately due to contract upgrade restrictions and not wanting to pay out the nose for a new phone, my dreams of owning a Blackberry Pearl, Centro or Palm Treo flew out the door. It was a good dream while it last. *sniff, *sniff

Instead I got the cheapest phone they had that would allow me to check e-mail, read blogs and call people. It’s no Iphone, but it will do the job for now!

I am happy to day my hunger has officially returned in full force! Around 9:30 my tummy was rumbling and I had a mini Peanut Butter Larabar to quiet it down.

I stocked up on the Peanut Butter Larabar Minis at the SD RNR Expo. They really are my favorite, so I made sure to grab a good handful when the lady yelling “Two Per Person” wasn’t looking. ;)

It felt great to go home to lunch to a now fully stocked fridge. Having so many fresh options for lunch always makes me smile. :)

I was craving Almond Butter and decided to go with the Almond Butter Quesadilla I had been concocting in my head for a while not.

I slathered half of a Flat Out Wrap with Almond Butter, Carrots & Spinach. I then folded it in half and heated it up on the stove top.

The wrap was nice and crispy, while the almond butter inside was hot and gooey.So, so, GOOD!

On the other half of the plate I had Grapes, the rest of the sliced Carrot, and a mini Pickle.

And to put the meal over the top, there was also some unsweetened Applesauce.

I quickly discovered the applesauce made a great dip for the Almond Butter Quasadilla.

While making lunch I discovered the last of the Salt Water Taffy that I had almost forgotten about.

I saved the Orange Creamsicle flavor for my lunch dessert.

Abbie was very curious on what I was taking a picture of by the window.

I usually don’t purchase the official photos, but the finishers plaque and great shots really have me considering it. ;)

Relaxation

Sorry about totally bailing on blogging last night! My blog software is still acting up on my mac, so I decided soaking in the bath tub and catching up on the TV was a MUCH better idea then arguing with my laptop. Oh yes…. much better idea. I was pleasantly surprised how quickly work flew more »
