Happy Memorial Day!!
I am predicting plenty of BBQs and picnics in many of your futures. For others I am predicting house cleaning catch up ad extra errand running. Either way I hope you enjoy this wonderful holiday and brief break from reality. 🙂
Instead of going the traditional route of Memorial Day celebrating, Melissa and I are going to brave the holiday crowds and head to Islands of Adventure! Melissa has been living outside of Orlando since January and she has yet to experience any of our theme parks. I told her we had to change that!
With all the walking and waiting I have planned for today I knew I needed a breakfast to keep me full and energized.
These waffles were made couresty of Aunt Jemiah’s Whole Wheat Waffle Mix. I made some slight alterations by using coconut milk, egg whites and a spoonful of almond butter with the mix. I then topped the waffles with vanilla non-fat yogurt and some cinnamon apple.
I had 2.5 waffle squares and it definitely left me very full. I think the extra addition of the almond butter helped too. 🙂
I have to figure out a way to sneak in a free and healthy lunch to avoid the downfalls of pretzels and burgers. Any suggestions on what to bring that I can hide in a pocket or one of those hidden zipper pockets in my bag? THey are really rude with their anti-outside food rule at the parks. 🙁
