I wish I could give you some exciting story about my night out on the town this Friday night, but I can’t. Instead I can give you the retelling of my very yummy dinner that has graced this blog before and spare you the pictures of me spread out on the couch in front of the tv in my underwear. I love Friday nights. 🙂
My Coconut Curry Tofu Wrap was so filling, that I was stuffed all afternoon. It was not until after I finished work, ran numerous errands and crashed on the couch that my hunger even began knocking on the door. I took my lazy attitude as a cue to take it easy with dinner and simply prepared a plate of left overs.
In my fridge I discovered some Rutabaga Fries & Baked Tofu from Wednesday night.
Which I paired with some Annie’s BBQ Sauce. I just can not get enough BBQ sauce lately!
I had to ditch a catered company meeting yesterday afternoon to book it to my little Brother’s graduation. Luckily there was plenty of left overs that I managed to bring back home with me, including some Veggie Pinwheels.
These pinwheels were amazing! They had carrots, artichoke hearts, mushrooms and even sunflower seeds inside. I am pretty sure they ordered them from Publix, so I will have to seek them out in the future.
Last, but not least my plate needed a little green. Enter a handful of raw broccoli.
After more lounging on the couch in my underwear – I love Fridays! – my stomach made room for a sweet treat.
I enjoyed the last two of Melissa’s Whole Wheat Peanut Butter Dark Chocolate Oatmeal Cookies with a dollop of Vanilla Non-Fat Yogurt on top.
Thanks again Melissa for the great goodies! I enjoyed every last crumb of them.
Tomorrow morning is my last Team in Training run before the big race. We’re doing a hilly 10 miler then decorating out shirts. It is going to be a great time! Let’s just cross our fingers we don’t get rained out. 🙂
