A Lunch Date

My BFF, Caitlin, and I have been on two very different schedules lately. With her now 14 hour work days and my constant traveling, it has been almost a month since we last crossed paths in April. Gasp! That is not good!

Being the brilliant girl that she is, Caitlin suggested instead of working on the outside of our schedules that we work on the inside and meet for lunch today. I welcomed the idea of any escape from work reality and met her today at Ethos Vegan Café for lunch.

Great minds think alike as Caitlin and I proved when we both ordered the same Coconut Curry Wrap with a Pineapple side for lunch.


The Coconut Curry Wrap consisted of tofu, raisins, walnuts and a veganaisse curry all wrapped up in a spinach tortilla wrap.


The tofu was very flavorful and the huge wrap was amazing! We both enjoyed our lunch choice.

Going out for lunch is something I don’t like to do everyday, but as a treat every once in a while it really is a great idea. Caitlin and I were finally able to catch up on all things life. She truly is a great friend and its nice to be reminded of that. 🙂

Before our lunch date I got to try something else new.


BTR Super Charge Cookies from Blue Mountain Organic are wonderful raw cookies chalk full of caoco nibs, vanilla, nuts and fruit.


Each cookie had a wonderful nutty taste and for such a small cookie were surprisingly filling. I think it’s the nut base that fills you up.

It looks our Memorial Weekend in central Florida might be a bust. The forecast calls for rain, rain, rain. 🙁 Not fun at all. I hope its sunny for everyone else out there. Do you have any special plans?

Tomorrow we’re having a little party to celebrate the graduations of both my sister and brother’s this past month and then its packing and rest for all the excitement next weekend. I am just excited to have a weekend where I don’t have to travel too far out of town!

That wrap looks delicious. I am restricted to lukewarm mush for lunch – I had my wisdom tooth out this morning. Blech!

Such a bummer that you will be rained out this weekend. My husband and I are headed to the Strawberry Festival in Orange County (California) tomorrow morning. I love strawberries! 🙂

i’m glad you and caitlin had a chance to catch up — i’ve noticed that you haven’t been able to hang out as much lately! once in a while restaurant lunch dates are fun 🙂

Sorry about your weather this weekend, but at least you’ll be with the people you love 🙂 I have no Memorial day plans as of yet, if I could only meet a hott guy who owned a boat, I’d be all set.
