Everything But The…

Tonight was my last Monday night run with my Team in Training group. Next Monday is out Bon Voyage party and the Monday after that is the Monday before we leave… ahhh.. so soon!

The sad part was our last run wasn’t even a complete one, my running buddy and I had barely run 2 miles when it started to lightening and we had to head out. Oh well, I guess 2 miles is better then no miles at all. ๐Ÿ™‚

Before my short run I had a new bar from the people at Country Choice Organic.

The Oatmeal Raisin on the Run Bar was very dense and tasty. A cinnamon flavor was very evident and it wasn’t too sweet.

They market this bar as a breakfast on the run, but I know it wouldn’t keep me satisfied. However, I wouldn’t mind experimenting with breaking it in pieces with some yogurt and fruit. That would make a mighty tasty breakfast. ๐Ÿ™‚

I was continuing the eating up the fridge theme from lunch and made an Everything But the Kitchen Sink meal using everything that I could in the fridge.

I started by roasting up some corn in the cob and brussel sprouts in the oven at 420 for 15 minutes.

While those were roasting I combined in a bowl

I added the Corn and the Brussel Sprouts once they were done, gave it a good mix and topped it all with a dollop of Trader Joe’s Peach Salsa.

I love Everything But The… meals! THis was really tasty and all of the different flavors combined wonderfully in the bowl. I had heated everything up together so the spinach was nice and wilted. Big Yum!

Now the problem is once everything was mixed together there was enough for 2 so I now have a portion of this left! I will just have to think of something creative to do it with for dinner tomorrow. ๐Ÿ˜‰

Dessert was two of Melissa’s Whole Wheat Oatmeal Chocolate & Peanut Butter Chip cookies.

These babies are good after you put them in the microwave for a couple of minutes. The chocolate is soo melty, I love it.

Now I must pack.. grrr… it’s suppose to be 90 degree the rest of the week in San Antonio. I am leaving hot and humid for more hot and humid. :/ Don’t worry I have lots of sun dresses in mind, my cowboy boots are a must and I can’t travel without my running shoes!

I cant belive SD is soooo close! I don’t own any cowboy boots but I love the way they look! Have fun packing, thats one thing I dont miss about the South the HUMIDITY!

I love meals with all sorts of things in it too. They always turn out so faulously!

Good luck packing and I don’t think I said it, but I read it this weekend and now would like to say – congrats on 20 miles. You are amazing!!!!

That’s too bad your run got cut off because of silly weather! You must be getting so excited for the marathon! It’s amazing how quickly they creep up on you! ๐Ÿ™‚

I love ‘everything but’ meals too! They always end up turning out so good even though its such a random mix and I feel very unwasteful about using up all my food that needed to be. I hate wasting stuff!

Yeah it’s freaking hot here. Well, I’m from Austin but SA is close enough. Hope you have a good time there…it’s too bad you’re not coming to Austin…I think you’d love it….lots of beautiful hills, running trails and lakes and the World Headquarters of Whole Foods – it’s like a foodie’s wonderland. It’s a very health-conscious city…..I don’t think you’ll find the same thing in SA…..but you will have some great authentic Mexican food!! ๐Ÿ™‚
