Tostatas

by Meghann on May 7, 2009

It is HOT outside! The temp has climbed over 90 degrees for the past week and its suppose to be even HOTTER this weekend. Summertime has officially arrived in Florida.

With summer comes the craving for Summer Food, specifically Mexican eats. :)

I missed out on a Mexican feast for Cinco de Mayo, but we can just call it Cinco de Mayo week and let the celebration continue on! Besides this meal was so good there does not need to be a special holiday to enjoy it. ;)

After brainstorming ideas about Veggie Enchiladas I decided Tostadas seemed like a more practical approach as it did not require rolling the corn tortillas or extra baking time. These Tostadas ended up being the best idea ever and were so simple, they took less then 10 minutes to make.

I started by placing three Corn Tortillas under the broiler for a couple of minutes then flipping and toasting up a couple of more.

On the toasted tortillas I layered with…

  • Spinach
  • Trader Joe’s Rice Pilaf
  • Black Beans
  • Zucchini & Yellow Squash I heated up on the stove top with some Taco Seasoning
  • Trader Joe’s Peach Salsa
  • Blue Cheese
  • Jalapenos

I the put the layered tostadas under the broiler for a couple of more minutes, just to get the cheese nice and melty.

Holy Yum!! These things were AWESOME!!! One of the best combos I have come up with yet. The corn tortilla toasted up under the broiler so crispy that they were able to hold all the yummy filling as I munched, munched away. And the addition of the blue cheese was a nice surprise. :)

Before I left work I snacked on a package of Annie’s Bunny Grahams the amazing Danica sent me.

I think there’s still time to enter her Annie’s Giveaway if you want some Annie goodies of your own. ;)

And dessert was another new treat from my freezer.

These little babies really are mini.

I wasn’t expecting to be satisfied by the small treat, but it honestly was so rich and so chocolatey it’s little statue didn’t faze me at all. The ice-cream part was very, very vanilla. I loved it!

Only one more day until the weekend!!! I CAN’T WAIT!!! It’s going to be another great weekend full of running and celebrating! :)

I am so jealous of you and your Trader Joes! I’ve only been there twice, . (both times while traveling). That salsa is killer on their Corn chips with Hemp Seeds. A-MAZING!!!!!!!!!!!

I crave Mexican food in the summer too! I’ve eaten it 3 times this week. Tonight I made buffalo chicken nachos with the new flavor of “Food Should Taste Good” buffalo kind.

Oh wow, these were amazing.

Hope you had a great day!

90 degrees? Wowzer! It was 73 degrees here today and I just about died. Do you find it hard to adjust to the heat when you run?

It reached 100 degrees here today I believe, but it isn’t humid like in Florida so it is bearable. Tostadas are perfect summer food!

Love your super colorful dinner. I love Mexican food, and we eat a lot of it at my house.

I’m a huge fan of ice cream bars, and a new fan of coconut milk products, so the So Delicious ice cream bars are definitely a product I’d like to try!

Mm the honey bunny grahams are the best ones! I got the mixed box last time with chocolate, honey, and chocolate chip and totally ended up just picking out all the honey ones.

I’m a huge fan of the So Delicious stuff too – especially since I can’t have ‘regular’ milk. Your tostadas look awesome.

You picked my favorite flavor bunny grahams – LOVE dipping them in greek yogurt or almond butter.

I wish it was 90 here! We’re still getting tons of rain, a windstorm, and 50 degree weather here in Seattle.

Looks really good Meghann!I think I could eat Mexican inspired food every night of the week :) I’m enjoying the heat! I ran outside yesterday around 4 and it wasn’t too too bad but I can see that my runs are going to have to start taking place later in the evening!
