Tostatas

It is HOT outside! The temp has climbed over 90 degrees for the past week and its suppose to be even HOTTER this weekend. Summertime has officially arrived in Florida.

With summer comes the craving for Summer Food, specifically Mexican eats. :)

I missed out on a Mexican feast for Cinco de Mayo, but we can just call it Cinco de Mayo week and let the celebration continue on! Besides this meal was so good there does not need to be a special holiday to enjoy it. ;)

After brainstorming ideas about Veggie Enchiladas I decided Tostadas seemed like a more practical approach as it did not require rolling the corn tortillas or extra baking time. These Tostadas ended up being the best idea ever and were so simple, they took less then 10 minutes to make.

I started by placing three Corn Tortillas under the broiler for a couple of minutes then flipping and toasting up a couple of more.

On the toasted tortillas I layered with…

  • Spinach
  • Trader Joe’s Rice Pilaf
  • Black Beans
  • Zucchini & Yellow Squash I heated up on the stove top with some Taco Seasoning
  • Trader Joe’s Peach Salsa
  • Blue Cheese
  • Jalapenos

I the put the layered tostadas under the broiler for a couple of more minutes, just to get the cheese nice and melty.

Holy Yum!! These things were AWESOME!!! One of the best combos I have come up with yet. The corn tortilla toasted up under the broiler so crispy that they were able to hold all the yummy filling as I munched, munched away. And the addition of the blue cheese was a nice surprise. :)

Before I left work I snacked on a package of Annie’s Bunny Grahams the amazing Danica sent me.

And dessert was another new treat from my freezer.

I wasn’t expecting to be satisfied by the small treat, but it honestly was so rich and so chocolatey it’s little statue didn’t faze me at all. The ice-cream part was very, very vanilla. I loved it!

Only one more day until the weekend!!! I CAN’T WAIT!!! It’s going to be another great weekend full of running and celebrating! :)

Lunch Variety

I had been looking forward to my lunch all morning as I carefully constructed it’s contents in my head. I was craving a bunch of things at once, so I incorporated it all into a platter lunch. This way I got a little taste of everything and it forces me to stop and enjoy my food as I use my hands to take bites.

There was a lot of chewing, crunching and num num numming as a result of this plate.

My plate assortment focused on my new BTR 4 Nuts Butter that had also played a role in my breakfast cookie this morning.

This time I used it as a dipping tool for the assortment of Pears, Carrots and Tempeh (Yes, I dipped my Tempeh in the nut butter) on my plate.

The dipping of the fruit, veggies and protein really forced me to stop and taste the nut butter. The combination of the 4 nuts blended smoothly into this flavorful concoction and it made me wonder why people don’t combine nuts in nut butters more often. I mean seriously what else could we have been missing out on there? If and when I finally get a decent food processor that will create a decent nut butter I promise to have a combination of every nut known to man out there. Don’t be surprised if I make a 7 nut butter..lol

To round out my yummy plate I also had left over Steamed Green Beans and a few Mary’s Gone Crackers for crunch.

For something sweet I had one of Melissa’s Chocolate Peanut Butter Oatmeal Breakfast Cookies.

It was definitely a full plate of lots of fun different things.

The best part about having a plate of variety is the fun combinations I can come up with. For instant here was a favorite combo of mine: Cracker, Nut Butter, Brie, and Tempeh!

It may sound odd, but it was delish!! I think I had three crackers that were identical to this one. :)

This morning I continued my sampling of Blue Mountain Organic products and had a serving of their Better Than Roasted Tropical Love Bites.

These babies are like mini chewy cookies made of nothing but Cashews, Mango, papaya, Pineapple, Coconut and Spices.

Upon first bite, I was reminded of tropical fruit leather. I am very sad that the cashew did not have a more prominent flavor, but overall the tropical flavor was definitely there with all of the lovely tropical fruits shining through.
