As I was leaving my apartment today I took a good look around and came to the total realization just how messy apartment has gotten in the past couple of weeks. There are boxes piled up by the door, clean clothes needing to be folded, food that I need to find a space for in the cupboard, Abbie’s trail of white puff destruction all over the floor and so on and so on.
But I swear I have a good excuse!
I guess going and going non-stop for the last three weeks with no visitors is the best excuse I can come up with. Sadly, that’s how my schedule is going to remain for the next month! Being a grown up and living on your own is harder then I thought. I am going to suck it up and tackle my apartment this evening and see how far I get. For me having roommates always sucked, but at least they always forced me to have a clean house.
Oddly my motivation to clean my apartment has no effect on my motivation to make wonderful yummy food.
I took my lackluster meal left overs from last night and did what I do best with leftovers… turned it in to something new and completely different!
I started by making an Open Faced Tempeh, BBQ Sauce and Mango Sandwich on a piece of Publix Multi Grain Bread and toasting it under the broiler for a couple of minute.
OMG! This was good!! The mango really complimented the BBQ sauce so well and gave it a nice sweet kick.
On the side I had the left over Roasted Veggie Mix.
There were a tad more vegetables left over then I thought when I emptied the container on to the plate. Smart Meghann would have put half of the vegetable back for another date, but the hungry at the time Meghann thought she could handle.
Moral of the story is, always listen to smart Meghann because now my skirt is uncomfortably tight thanks the large amount of fiberiffic veggies. Oh well.
Mid-Morning I snacked on a serving of TJ’s Peanut Butter Pretzels.
I realized I didn’t get my fix of these yesterday and that made me sad.
But eating a serving today made me happy.
San Diego Meet Up….
I know it’s not until the end of the month, but I am trying to get some numbers together to see if any of my San Diego readers are interested in meeting up for dinner on Friday, May 29th? It’s the Friday before my marathon and I would sure enjoy the company and support!

I need to think of adding sweet things like fruit to my savory dishes more often…you’ve inspired me.
I can’t believe you still have some TJ’s pretzels left, I would have devoured them by now.
Love your leftover reconstruction as usual! My apartment is messy too, when I don’t have visitors I am less inspired to keep things tidy.

Lend me some of your calm demeanour about your apartment! Why am I so anal compulsive about things being clean? I live with my boyfriend and I think he might go insane if I ask him to rinse his dishes one more time … ;]
I wish I wa smore ocmplusive about things being clean. My whole family has this disorder where we hate to clean. I literally grew up with a housekeeper who would clean becuase we were all too lazy. Too bad I can’t afford a housekeeper now.

Those Trader Joe peanut butter stuffed pretzels look so good! My husband is going to Ohio next week and I have given him a shopping list based on what you bought the last time. I can not wait to try their stuff! Will you be stocking up again when you go to San Diego?

AH I am so anal about cleanliness! It must be because I live in a tiny studio apartment and everything out of place is so noticeable – it also makes me feel like my life is out of control when things are messy … haha control issues, anyone?!

O would rather be messy than obbessive about being clean.. I have OCD with my room everything has to be perfect and it is really annoying.. I try really hard to except like a mess but I freak.. I wish it was different..

Haha see Courtney’s comment about cleaning? Reverse it and that’s my BF and me. He’s SO neat and picks on me all the time for my scatterbrained habits…like, I know the shoes don’t belong by the door, but I just don’t THINK about that when I’m coming home from work LOL.
Oh and I hate how veggies can get you SO full in a hurry and then an hour later you need more food. At least, that’s how it is with me, often
I am a compulsive cleaner and my boyfriend is a bit messy. It’s taken a lot for me to get used to someone else’s mess but to be honest it’s made me calm down a little because I realize I CAN go to bed if every dish in the sink isn’t done.
