Crazy Weekend Wind Down

It feels so good to sit on my own couch, watch the televisions shows I want to watch and just be plain lazy. The perfect Sunday afternoon wind down from another great weekend. :)

We ended up stopping right outside Jacksonville for lunch. My Dad and I chose Tropical Smoothie for wraps and my Aunt and Mom went to Firehouse for some subs.

I had the Veggie Veggie wrap which was southwestern rice, corn black beans, asparagus, romaine lettuce, diced tomatoes, onions, & parmesan cheese sans the dressing that was suppose to come on it.

It was very tasty, but I should have asked for it without the rice. I will have to remember that for next time.

The wrap came with an orange that I enjoyed as my lunch dessert.

When I finally made it back to my apartment I had a couple of presents waiting for me.

The first from Melissa at Fitness NYC who sent me a care package to help with my upcoming marathon.

Thanks Melissa!! These goodies are going to come in handy!

With the package she packed some Sweet Potato Oatmeal Muffins and Breakfast Oatmeal Cookies.

Of course, I had to try a muffin.

YUM!!! It was perfect, with just a hint of sweetness. I love it. :)

The next was a gift from Danica who sent me a variety of Annie’s goodies.

Right now my kitchen cabinet is filled to the max with snacks and bars. In fact it’s so full I had to empty the shelf I had my reusable bags on so I could start putting food on that shelf as well! BUT, they are just snacks and my kitchen was bare of any essentials for lunches or dinner so off to Whole Foods and Publix I went.

At Whole Foods I picked up an Honest Tea.

This baby just had a touch of sugar in it and I have to say that touch was even too sweet for me. I have officially gotten to the point where I can’t stand any sugar at all in my tea anymore. Unsweet only for me please!

Since this was a celebration weekend I had no problem indulging by eating out for almost every meal and having my fair share of sweets. However, I felt it was time to do a little eating out detox. All I wanted for dinner was something simple and I was really craving almond butter.

I had a piece of toast I slathered with Almond Butter and topped with Spinach and Carrots. I then put the toast under the broiler for a couple of minutes to heat everything up.

It might sound like an odd combination, but it was sooooo good and exactly what I was craving! :)

I also had the last of the Fruit Salad from this morning that I mixed with Vanilla Coconut Milk Yogurt and some Ezekial Almond Granola.

Perfect dinner!!

All weekend I was dreaming of all the wonderful Turtle Mountain Coconut Milk Ice Cream products I had waiting for me in my freezer back home. I felt good knowing I was going to enjoy one after dinner tonight. After a quick survey of the products I chose the mini Coconut Almond Ice Cream Bar to pop my Coconut Milk Ice Cream cherry.

It was the perfect minature size coated with a great Chocolate and Almond coat.

Upon first bite I was pleasantly surprised that the coconut flavor was definitely there, but as with the yogurt it’s a faint flavor in the background. It was rich and the great chunks of almonds in the coating gave it the perfect nutty crunch. I can’t wait to slowly work my way through the rest of my supply, but I can tell you right now, this one is going to be my fave.

I am WIPED right now. It’s been a long weekend with lots of excitement and not enough sleep. I am going to hit the hay early and prepare for a nice full week of work.

Homebound

It’s official. My sister’s apartment is all packed up and we are currently pulling all of her possessions behind us in a great big trailer. Kelly has graduated and is moving back home. She will start grad school at UCF in the fall, but in the mean time she will be living back home and working for the summer. I can not wait to have my little sister less then an hour away from me. :)

We actually finished packing the majority of Kelly’s stuff fairly early yesterday and decided to see a movie with the spare time. The boys saw Wolverine and the girls saw Ghosts of GIrlfriends Past.

In the theatre I snacked on a Cinnamon Raisin Gnu Bar.

The movie was cute, but I have to say Mathew McConaughey has been spending far too much time in the sun. His face resembled burned leather. There was also too many shots of girls in barely there underwear and not enough of the shirtless Mr. McConaughey.

After the movie we all started listing off all of the wonderful local joints Tallahassee has to offer and all agreed Monks would be the best choice. I LOVE Monks and their build your own burger menu. For some one like me who has a taste for crazy combinations its perfect.

But first we had to study the beer menu.

After quizzing our server, my Sister, her boyfriend and I split a pitcher of Hoegaarden, a Belgium White.

It was disgusting. Really, we all hated it and immediately requested a new pitcher of Smithwicks instead.

After studying the build you own menu I decided to go with a tropical BBQ theme. I ordered the Chicken Breast Burger with Pineapple Rings, Red Onion, Blue Cheese and Chipolte Honey BBQ Sauce on Honey Wheat Bread, with Fruit Salad on the side.

It was messy, but good! I had actually asked for the sauce on the side, but since we already sent the beer back I didn’t feel like conplaining about the sandwich. I can live with an oversauced burger. :) I ate all of the fruit and about 3/4 of the chicken burger.

We were all sporting Seminole Pride at the meal.

It was late when we were done eating and I pretty much passed right out when we made it back to the hotel.

This morning I felt I could have slept forever, but my parents felt obligated to wake my up at 6:30am. WHy? I shall never know.

We headed to my Sister’s apartment to pack up the loose ends and my Aunt and I made breakfast. Stairs were still not my friend.

I made a 2 egg omlette, Fruit Salad, and Toast with Raspberry Preserves.

We were trying to kill the vegetables in the fridge so I had Asparagus, Radishes and Spinach in my omlette.

As I started cutting the radishes, my mom looked over my shoulder and asked if I was really going to put those in my eggs. My Mom’s tastebuds vary greatly from mine. I quite enjoyed the radishes in my eggs. :)

We hit the road a little after 9:00am and now I am killing time on the four hour drive back by typing this post. You can also assume I have had my fair share of this community bag of homemade trail mix.

This is definitely when an Iphone would come in handy. Could you think of a better time to catch up on blog reading? Oh well.
