I Shall Not Waste Food

Wow, this morning just dragged on and on. I am trying not to be too much of a complainer, but I am tired! Luckily I have other co-workers who are battling the same dragging feeling. One who sits next to me did not get home until midnight on Saturday and then her body was so thrown off she slept all day yesterday and could not go to sleep until the wee hours of the early morning. We feel each other’s pain.

Luckily I have had expense reports to keep me busy and a big cup of very caffeinated tea to keep me awake.

I was also snacked on a serving of Peanuts and Dried Fruit mid morning.

Lunch was….. interesting…. to say the least!

I had left over Sweet Potato Hashbrowns and Coconut Curry Broth in my fridge so I thought of this brilliant idea to combine the two. I also added some Kale, Broccoli and Mushrooms to the mix.

I could also not resist the addicting Peanut Butter Pretzels on the side.

Can I count the Peanut Butter as a protein source? No? Whatever they filled the tasty void either way.

The soup was actually really, really good!!! Sometimes my creativity really pays off and I end up with a very flavorful, colorful meal. I am so glad I did not let that leftover coconut curry broth go to waste! Even though I had ate all the good stuff last night it still was a wonderful addition to my lunch. I need to take a note of this to make sure any food I have left over never goes to waste!

I also could not stop myself from having 2 little Cinnamon Twists for dessert.

These were another great find from Trader Joes and at 30 calories a piece these are going to be very hard to resist. I often find the lower calories something is, the great the temptation. It’s like there is a little voice in my head that says its good to eat, no matter how the other side says its un-necessary and full of sugar. Oh well.

Now I must get back to work. I have also have a Team in Training run to look forward to after work, perhaps today would be a good day to walk the park? lol

That is sooo true. If I know a treat is “healthy” (like a whole-grain cookie or something), I’ll end up being tempted to eat way more of it. So it pretty much ends up being the same calorie total as a more decadent treat. 😛

I loveee Thai curries because of that great coconut flavor and mild spice. I never thought to bring the leftover broth home though; that sounds like a good idea, really!

I think your lunch combo sounds great!

It is harder to resist “lower calorie” stuff for me, too. Since I know it’s so much lower than other things, it’s easy to justify having it even when I don’t need it.

I need to find PB pretzels, sounds like the perfect combo! Hope you feel more awake as the day goes on, I find it’s always hard to get back into a routine after a trip.

in terms of low cal stuff…its definitely tempting! one thing i like to do is consider the calories for the ENTIRE package, and not just the single serving. the entire package can be upwards 800+ calories. its so easy to lose sight of that. i’ve been known to crush entire bag of a low cal product in a day or two. not very low cal anymore :-/

At a “health food” (haha) store where I shop, they sell chocolate-covered BP pretzels in bulk. I’ve “sampled” one or two and holy moly, they are good.
