Caitlin's Birthday Celebation

It feels so great to finally be back in my own apartment! I missed my bed, my own food and most of all my DVR. I have a weeks worth of recordings to catch up on. ;)

I have to admit it did take me a while to finally make the drive from my parent’s house to my apartment on the complete opposite side of Orlando. I took a mini nap on the couch, caught a ride to Target with my Dad, then made a really yummy lunch with left overs in the fridge.

I was really, really craving a smoothie so I made a really yummy one out of Ice, Strawberries, Pineapple, Non- Fat Yogurt, & Peanut Butter.

It really hit the spot and went down much too fast. I would also like to point my Dad bought a thing of strawberries for me yesterday and I killed the entire container all of my own in less then two days. I just love my strawberries. :)

I had also reheated the leftover Tofu from last night and topped it with some BBQ sauce.

And for some greens my Dad had some steamed Brussel Sprouts in the fridge.

I <3 Veggies!!

When I finally did make it home, unloaded my car and did some light grocery store I needed a snack and whipped out the very addicting Trader Joe’s Peanut Butter Pretzels.

These are beyond delish, I find it really hard to stick to just one serving. I had to count out my serving, tie the bag back up with out trying one and then pushing it to the very back of the pantry before taking the pretzels to my couch. I figure if I waited to eat them until I was comfy on the couch that I would be to lazy to get up and try to snag more. ;)

In celebration of the wonderful Caitlin’s 25th birthday I met up with her, her Dad, Husband and Friend Harry at Royal Thai for a fabulous dinner. I want to give a big THANK YOU to Caitlin’s Dad for graciously treating us all for the meal.

Of course, Caitlin wanted to dive into presents right away.

It was so easy picking out presents for Caitlin, I just acted like I was shopping for myself and went with there. I think she was pretty happy with the loot!

For food the table started out an order of Spring Rolls

I had 1/2 a Spring Roll and 1 Dumpling.

I think dumplings are my favorite asian appetizer and these did not disappoint. Very yummy!

This was my third visit to this restaurant and each time I have got something different, the menu is so huge I just want to try everything. Tonight I ordered the Ga-Ree Dai which was shrimp in yellow curry with potatoes and onion.

This was sooo coconutty and flavorful. Very good. I really loved the coconut curry broth and have some left over to enjoy again tomorrow.

My meal also came with a mini Cucumber Salad on the side.

I politely declined continuing the birthday celebration with the gang as I still had to unpack at home. But I do wish Caitlin a very Happy Birthday! 25 is going to be another good year. ;)

When I did get home I wanted chocolate so I had a piece of the Dark Chocolate Bunny from Easter.

I only have one piece left! This bunny has been very good to me.

But now I really do need to go unpack. I can’t believe I have to go back to real work tomorrow... boooo….

Fighting the Jet Lag

Running 15 miles the day after I returned from Long Beach seemed like a great idea when I was planning out my training runs, but this morning when the alarm went off at 6:30 I just was not feeling it.

Even though I passed out last night at 10:00 and got well over 8 hours or sleep, I woke up exhausted and running was the last thing on my mind. But I put on my running shoes anyways and pushed myself out the door trying not to give it another thought.

Before I left I did manage to have a Mountain Mix Mojo bar, the lovely Caroline had provided me with in my goodie bag.

I missed my Mojo bars sooo much! I am so glad to have them back on the shelves.

My run started out not so bad. I maintained below 9 minute mile averages, but my body was still dehydrated from my long flight and I was chugging water like there was no tomorrow. My water bottle was empty before mile 9, luckily there was a McDonalds on my route where I was able to fill up. You should have seen the funny looks I got from people waiting in line for their McMuffins when I ran in covered in sweat in my sports bra and filled up my water bottle. ;)

My headphones also were on their last run today. I kept begging them to make it through the end and I promised to lie them in their final resting place when we were finished..i.e. the trash can.

After mile 10 I could feel my energy depleting and my body ready to give up. I pulled out some dried fruit at this point and had three pieces for a little boost.

I knew there was no way I could finish 15 miles today, but I was very happy to have completed 13.69.

When I did make it back to my parents house I immediately jumped in their pool. It was the perfect way to cool down after my long run. :)

While I was showering my Dad was very kind to make me a great big breakfast for after my run. I saw a sweet potato in my Dad’s potato basket and requested Sweet Potato Hashbrowns, it was soo yummy!!

Of course, being my Dad, he could not just leave it as Sweet Potato and added some sausage for ‘extra flavor.’ I will admit that sausage made it tasted good and I continued to pick at the potatoes after I finished my plate.

My Dad also scrambled 2 eggs for me.

And I cut up some fresh strawberries. They were perfectly ripe and sweet. Best Strawberries yet!

With half of a mini Onion Bagel it was the perfect breakfast!

HAPPY BIRTHDAY CAITLIN!!!

Twenty-five years ago today my farvorite blog sista and BFF in life arrived on this planet. I want to wish Caitlin a very HAPPY BIRTHDAY and hope she has an amazing day at Disney with her wonderful husband.

I met Caitlin back in September right after I moved to Orlando. She has took me in under her wing and I could not imagine the last 8 months with out her. Who else would spend hours at grocery stores with me? Go on crazy running adventures? or Gossip with me for hours on all thing Blogs? Caitlin truly is one of the sweetest people ever and I dedicate this day to all things Caitlin! Yay!!!
