Chickpea Taco Salad

We are halfway through Friday!! Today is not quite as stressful as yesterday so far, but it has still been very busy. I am just ready to go home and enjoy the weekend!

Mid-morning I snacked on a serving of Lightly Salted Peanut and a piece of Dried Kiwi.

My lunch was a revamp of my Chickpea Tacos on Wednesday night.

I basically turned the Chickpea Tacos into a Chickpea Fiesta Salad. πŸ™‚

In my bowl

  • Romaine Lettuce
  • Taco Seasoned Chickpeas
  • Corn Tortilla Shreds
  • Kashi Fiery Fiesta Pilaf
  • Corn
  • Fresh Mango
  • Carrot
  • Tomato
  • Jalapenos
  • Drizzle of Annie’s Cucumber Yogurt Dressing

It was a yummy spicy salad. The dressing and fresh mango did a nice job of cooling down the spiciness of the Kashi Pilaf.

I really need to get a real salad bowl, the silver mixing bowl just makes me look like a salad pig. lol

I was soooo tempted to grab a piece of chocolate or handful of granola on way out the door. My meal left me satisfied, but for some reason my sweet tooth was just not having it. I reminded my sweet tooth it will get dessert tonight and that seemed to calm it down. πŸ˜‰

Anyone doing anything fun this weekend?

Tonight I am deep cleaning my apartment, tomorrow I had a 13 miles training run and then Universal, and hopefully Sunday hitting up the beach!

Chickpeas are just the best thing ever. I have to work tonight – but looking forward to sitting out by the pool this weekend. After I go to the library to get something good to read, of course! πŸ™‚

jajaja….. you’re like me, grab whatever seems bigger to mix salad! So getting a real salad bowl will be my weekend’s to-do. πŸ˜€

I’m hoping to eat outside tonight and enjoy the weather after running, go to the farmers market tomorrow and maybe a hokie football scrimmage.

I have a social-media seminar this afternoon that I’m actually kinda looking forward to. Then this weekend I’m going to a brunch (and experimenting with baking…yikes) and going running with a friend near the beach on Sunday.

yum! i think that is seriously one of the best looking taco salads I’ve ever seen! mango, chickpeas, cucumber yogurt dressing…wow!

I should do the taco bowl with some of my broken tortillas in my freezer! Sounds like a fun weekend- hope it’s good weather there for you! I hand my first 10km race which I am nervous about.

but just my stuff gets to have a party with PB… I have to wait for the wedding (living at my dad’s in the interim)

sometimes salads like that leave my unsatisfied bc I need to eat something either a. with my hands or b. hot.. It is just mental in my case… in those cases I either eat a little soup with my salad or have a sliced carrot or pepper on the side to munch on! yum yum yum
