Easter Left Overs

by Meghann on April 13, 2009

One of the many great things about any holiday is the amount of wonderful left overs that are being shoved at you as you are walking out the door. 🙂 Trying to get rid of the copious amounts of food at the end of the gathering is always a favorite past time of any host.

I was a good guest and took two decent size containers of left overs from yesterday’s Easter Lunch. One I enjoyed for lunch today and the other will play a role in my dinner tonight.

In the first container I managed to snag some yummy leftover Vegetable Pasta my cousin had made, some Roasted Veggies and ¼ of a Sweet Potato. These left overs were perfect the way they were, no need to dress them up or create something new.

With my lunch I had the last of the Fruit Salad I ate this morning.

I am also ashamed to admit my headless dark chocolate bunny is now missing its shoulders as well.

I don’t think people realize how hard it to break off a piece of solid Dark Chocolate. That was a lot of work to get those shoulders off.

Earlier I had snacked on a couple of chopped Whole Carrots with Almond Butter for dipping.

Abbie was on vacation at my parent’s house last week. She is VERY spoiled over there with daily pig ears, extra helpings with dinner and her Uncle Scooby is always by her side to keep her company.

Since her return Abbie has been slightly depressed and won’t come out from under my bed.

What’s a Momma to do? I think I may I have to stop on the way home and pick her up a new dog toy. Nothing is worse then puppy depression.

Yummy looking leftovers! My dog loves hiding under my bed in the morning too, when I let him out. I think it’s sort of like a “den” for them?

I’m trying to figure out how many meals today I can have leftovers.

Maybe Abbie needs a tutu?!

I hate dogs dressed up as people. Don’t ever do that!

Yummy leftovers!

leftovers are the best!

My parents’ dog is the same way – if she’s around her brother (my in-laws’ dog) even for just a day, they’re both so depressed when the other leaves.

Yeah, chocolate bunnies are impossible to break into pieces. I think it’s a conspiracy by the candy companies to make us eat the maximum amount of chocolate in one sitting. One time, I literally had to chisel a solid chocolate car into pieces with a butter knife and a hammer. It was intense.

I wish I lived closer to my parents and family as I LOVE leftovers. I remember in college i’d return with a COOLER sometimes filled with yummy leftovers. My favorite part is using them in other things like ham in omelets, roasted veggies as salad toppings, etc. Congrats again on all your great runs! Hopefully the half will be as great for me and Melissa (FitnessNYC) as this weekend was for y’all! Hop on over and see my new blog!

awww poor abbie! i think she needs some under-the-bed snuggle time with mom 🙂

AWWWW Meghann! I laughed at that picture of Abbie hiding, but i know exactly what you mean – it breaks your heart when the pup is sad!

Hmmm – maybe get her a new toy like you said, and just play with her, with the toy all night long?

Or maybe get Maggie and James to come hang out with her tonight?

Awww, poor Abby! Lunch looks great.

Hope Abbie cheers up. I’m sure she will. Our dog always leaves hiding for some extra food ; )

LOVE leftovers!! I eat them for lunch almost every day, but the ones from my mom are almost always better. My chocolate bunny is missing his ears 🙁

15 ksgoodeats April 13, 2009 at 2:19 pm

16 Danielle April 13, 2009 at 2:27 pm

I too love leftovers, unfortunately I didn’t get any from Easter 🙁

17 Hallie April 13, 2009 at 3:04 pm

Holiday leftovers are awesome. I mean, leftovers are always great, but when your family “pushes” the good stuff on you, it’s even better 🙂

18 John April 13, 2009 at 3:16 pm

Poor Abbie! Scooby has been sad too.

19 Shelby April 13, 2009 at 3:25 pm

20 wholefoodswholeme April 13, 2009 at 4:01 pm

23 Nicole April 13, 2009 at 5:05 pm

I hope Abbie starts feeling better!! A new toy might make her feel a bit better! I think she’ll start coming around with time.

My dog is sick today! He has been throwing up 🙁

24 Bec April 13, 2009 at 5:26 pm

Sounds like Abbie had a great vacation and now has the vacation blues!

25 Meredith April 13, 2009 at 7:15 pm

26 Erica April 13, 2009 at 7:15 pm

Aw- poor Abbie! Isn’t it funny how emtional they can be?

27 Pearl April 13, 2009 at 7:27 pm

leftovers look great! awww poor abbie.. oh dear thing. i wouldn’t be able to resist that look, either.

28 Lauren April 13, 2009 at 8:12 pm

I love leftovers! Especially veggie-filled ones. The veggies seem to absord even more fantastic flavor over time, it’s great!

Haha, too cute about Abbie. It’s funny because our pup, Sammy literally gets spoiled beyond beleif when he visits grandma and grandpa and goes through the exact same puppy depression for the first day he is back at home. He lays in bed all day and won’t eat his food. He is always back to his normal self the next day, but goes through slight withdrawl from attention overload at my parents.

Hope you are off to a great week Meghann!

29 Michelle April 13, 2009 at 8:39 pm

Mmm your lunch looks delicious! And it is soooo hard to break off pieces of solid chocolate! I almost broke a tooth once trying to bite off a bunny ear.

30 Joanna April 14, 2009 at 11:50 am

Your Dog is adorable.

31 Marianne April 14, 2009 at 9:14 pm

Poor Abby. My cat is the exact opposite – when I go to get her from whoever she’s been staying with, she’s super excited to see me and won’t leave me alone.
