My First Pure Bar

The ever elusive PURE bars have finally found their way into my life.

Well, atleast one has. :)

Abbie had placed a Chocolate Brownie PURE Bar in my Runner’s Easter Basket and I was very excited to finally try the bar as my snack this afternoon.

I have heard mix reviews of the bar. They are very similar to Larabars and seem to have the same reputation. Some hate them and some love them. I honestly was a bit scared during m first bite, but I have to say I really enjoyed it. It was very rich and reminded me of a Little Debbie’s Brownie. It was thick, dense and very chewy.

I am interested to try other flavors of the bar in the future, but for now I am happy to have a second Chocolate Brownie Pure Bar waiting for me in the pantry. :)

Easter Lunch left overs once again played a big role in my dinner tonight. :)

My Aunt had baked a TON of sweet potatoes for Easter and as I was being encouraged to take my weight in food home with me yesterday Kath’s Nutty Vanilla Sweet Potato & Kale Soup immediately flashed in my head.

Tonight I re-created Kath’s soup but with the addition of Sun-Dried Tomatoes and Onion. It was just as delish as the last time I made it and was truly the perfect way to use up the baked sweet potatoes.

With the soup I also had 2 small piece of Publix Whole Wheat Toast that I accidentally let go to long in the toaster.

I had been toting around one of Jasmine’s Chocolate Chip Coconut Blondie with me all weekend and as I was unpacking my traveling food stash I knew this was going to be my dessert this evening.

It was slightly smooshed, which honestly made it a little better.

Now I am off to finish up some laundry and unload the dish washer. Could my Monday night be anymore exciting? lol

Easter Left Overs

One of the many great things about any holiday is the amount of wonderful left overs that are being shoved at you as you are walking out the door. :) Trying to get rid of the copious amounts of food at the end of the gathering is always a favorite past time of any host.

I was a good guest and took two decent size containers of left overs from yesterday’s Easter Lunch. One I enjoyed for lunch today and the other will play a role in my dinner tonight.

In the first container I managed to snag some yummy leftover Vegetable Pasta my cousin had made, some Roasted Veggies and ¼ of a Sweet Potato. These left overs were perfect the way they were, no need to dress them up or create something new.

With my lunch I had the last of the Fruit Salad I ate this morning.

I am also ashamed to admit my headless dark chocolate bunny is now missing its shoulders as well.

I don’t think people realize how hard it to break off a piece of solid Dark Chocolate. That was a lot of work to get those shoulders off.

Earlier I had snacked on a couple of chopped Whole Carrots with Almond Butter for dipping.

Abbie was on vacation at my parent’s house last week. She is VERY spoiled over there with daily pig ears, extra helpings with dinner and her Uncle Scooby is always by her side to keep her company.

Since her return Abbie has been slightly depressed and won’t come out from under my bed.

What’s a Momma to do? I think I may I have to stop on the way home and pick her up a new dog toy. Nothing is worse then puppy depression.
