Today was super crazy at work! We are getting down to the final preparation for our conference in 2 weeks and I was away from my desk all day putting together packets so we can ship them out in time for the big day. Tomorrow is going to be more of the same, but I have to say I love working towards a deadline, it makes the day fly by!
Another good way to have the day fly by? Having your boss treat you to a fantastic lunch!
This morning I had an e-mail from my Vice President suggesting she treat my supervisor and I to lunch instead of our normal weekly meeting. No meeting and a free lunch, who am I to say no?
We ended up going to a fabulous resteraunt I have been dying to try after hearing all the great reviews from fellow co-workers. It’s called the Ravenous Pig and if you are in the Orlando area I highly suggest you check it out.
I studied the menu for a good 10 -15 minutes before finally deciding on the Oyster & Shrimp Po-Boy topped with Parsnip Slaw and Homemade Pickles with the Garden Salad on the side.
It was fantastic!! I haven’t had a Po-boy in too long and this one was perfect. It wasn’t overly sauced and was the perfect petite size for lunch time enjoyment. The salad was also light and refreshing. I’ve been told I need to come back for dinner to see what this place is really known for.
The salad and the burger my two bosses ordered looked amazing as well. I have a feeling everything on the menu would have been amazing.
During the meal my eye kept catching the desserts being served around me. After confessing to my Vice President how big of a sweets fan I am and discussing with her the multiple locations of Tart Yogurt places I know of in the area, we knew we had to indulge in some dessert ourselves.
As the waitress ran through the desserts my ears perked when she said ‘Homemade Greek Yogurt Ice Cream’ ummm… YUM! We decided to split the Ice Cream and their famous “Pigtails’ which were fried dough sticks with a Chocolate-Mocha Dipping Sauce.
I had one Pigtail with sauce and about 75% of the Greek Yogurt Ice Cream.
OMG the Ice Cream was everything I hoped for. I am going to go back just for this. It’s just like Tart Yogurt, but better and creamier! We technically ‘shared’ the bowl but my spoon definitely made an appearance more then others.
I was STUFFED after lunch, but luckily I was running all over the office collecting things so I didn’t get that stuck at the desk sleepy feeling.
Before my lunch though I did have a snack of a Chocolate Brownie Gnu Bar.
This bar was kind of blah, I much prefer their Peanut Butter bar much better.
My dinner was not as exciting as my wonderful lunch, but it did the job.
I had a couple of 1/2 cans of beans in the fridge to use up, so I did what any bean condesseiur would do.. I made a Bean Burger.
Into the food processor I dumped
- 1/2 can Chickpeas
- 1/2 can Black Beans
- Minced Onion
- Whole Wheat Bread Crumbs
I pressed the power button and when the mix came together I formed two patties. One went in the freezer and the other under the broiler for about 8 minutes on each side.
I ate the Bean Burger sans bun with Spinach, Tomato and Country Bob’s All Purpose Sauce on top.
I debated making sweet potato fries on the side, but came to the conclusion that required way too much work. Instead I heated up the leftover Roasted Asparagus…
… and chopped up 2 whole Carrots.
I agree with Tina that whole carrots are wayyyyyy better then Baby carrots. They can’t even compete with each other.
I had a very indulgent dessert with my lunch, so instead of indulging again I had an Apple with Naturally Nutty Chocolate Toffee Butter Peanut Butter.
Again for the second time in one day I had the perfect dessert.
