Coconut Chicken Nuggets

I tried something new this afternoon for snack time.

Last week I received a coupon in the mail for a free box of Mary’s Gone Crackers. I have seen these popping up on the blog world, so I was very excited to be able to sample them my self.

These crackers are:

  • Organic
  • Kosher
  • Whole Grain
  • Heart Healthy
  • Vegan- Dairy Free
  • Wheat Free – Gluten Free
  • No Hydronated Oils
  • No Trans Fat

Sounds like the perfect, healthy cracker. Now the true test was whether they taste good or not.

I had a serving of Marys Gone Crackers today with the last of my Jalapeno Hummus.

These crackers were actually very, very tasty. I like them! Chock full of seeds and rice, these crackers had a lot of flavor to them. The were the perfect tool for dipping the hummus and I think would be even better with some great cheese on top.

I give Marys Gone Grackers two big thumbs up!

Dinner was pretty tasty too.

I had an idea in my head to make Baked Chicken Nuggets for dinner. While I was searching in the cabinets for Panko Crumbs I stumbled upon my Unsweetened Shredded Coconut and got the idea to make Coconut Chicken Nuggets.

I toasted the Unsweetened Shredded Coconut with the Panko Bread Crumbs in the over at 400 degrees for 5 minutes. I seasoned the mixture with Red Pepper Flakes, Cinnamon, & Cumin, then dipped chunks of chicken into a mixture of milk & eggs before coating them in the Coconut mix.

I baked the coated chicken in the over at 400 degrees for 15 minutes, flipping half way through.

I dipped the Coconut Chicken Nuggets in a random container of Sweet BBQ Sauce I had in the fridge. It was the perfect combination. I loved it!!! I always enjoyed Coconut Shrimp as a kid and this was a fun, slightly healthier spin on the classic. I highly suggest trying this recipe. I had left overs and I can’t wait to eat this again!

I also made some roasted Asparagus to go along side my nuggets.

And heated up some left over Pumpkin & Sage Orzo.

It was a really yummy, balanced meal.

FOr dessert I couldn’t help myself and reached for a Naturally Nutty Jar. ;)

I had the last half of the Kit Kat Blondies Amanda sent me ages ago with a smear of Toffee Butter Peanut Butter on top. You have no idea how good that was. :)

I have a 3 mile run planned tomorrow, then thats it before my 15 mile Trail Race on Saturday. I am very excited about this race, but very nervous that its my first trail race. I’m going to run the 3 miles in the grass, I’m not sure how much that will help preparing me, but its a start!

Goal Achieved

I am very HAPPY to announce that all of the highest bidders in the Blogging Bake Sale have been contacted and have made their wonderful donations. Now its all up to the many generous bakers out there to start baking up the treats and sending them around the country. :)

In fact one of the baked goods will be heading very far out of the country.

I was very honored to receive a bid on Monday from Captain Sarah A of the United States Marine Corps. She is currently stationed in Iraq and apparently an avid blog reader.. I felt honored that even though she is halfway around the world fighting for our country she took a little time out of her day to donate to my cause.

Sarah, I hope you enjoy Whitney’s Granola as I know you are looking forward to a homemade treat! :)

As the donations came in yesterday on my TnT website I noticed my total money raised go over and beyond my goal landing comfortable at a grand total of $4,731!!!

That’s a lot of money and I seriously have you all to thank! This money is going to a really great cause and I know will help so many others. Now, any money that was raised over my inital goal of $3900 will 100% go directly to the Leukemia & Lyphoma Society. How cool is that?

Now all there is left to do is run that Marathon at the end of May!! Whose pumped? I’m pumped!!!

Mid morning I snacked on a Quaker Simple Harvest Bar.

For lunch I had one of my favorite creations that I feel like has been forever since I last enjoyed.

A Baked Sweet Potato covered in Black Beans, Jalapeno Diced Tomatoes, Jalapenos and Swiss Cheese.

Oh yes, it was as good as it looks! Such a great flavor combination going on here and so many things that are good for you in one lovely meal. :)

Then when I got back to my desk I decided I needed to eat the last Vegan Chocolate Chunk cookie Vani had sent me, you know before ‘it went bad.’

And you best believe I inhaled all of those lovely crumbs that are in the picture as well. I am so glad there was only one cookie left because after the first I was really craving another and know if it were available that it would have been gone as well. :)
