Why is it the rest of the week can speed by but Friday afternoons seem to tick on forever and ever? I was ready for the day to be done and ready to hit the bike trail.
To make sure I had adequate fuel for my bike ride I tried a Peanut Butter GNU Bar the company sent me to sample.

I really like the size of this bar and the great nutritional stats: 140 calories 12 grams of fiber and an ingredient list I can understand!

It tasted pretty good as well! I can’t wait to try all of the other flavors they sent me.
I was very surprised when the parting clouds and gleaming sunshine the weatherman predicted were present and accounted for when I stepped outside after work. Two points to you Mr. Weathermen. Hello bike trail.
I was on a bit of time crunch due to my unwillingness to clean my apartment the night before, so I did a simple 10 miles and headed straight home.
Since I don’t wear headphones on the bike trail I have to entertain my mind somehow and today it just happened to be my dinner. I spent the 45 minute ride thinking about what I had in the fridge and what would work. I came up with a pretty odd, but delicious combination.

This pasta dish included plenty of my favorites and was something I just kind of threw together as I cooked.
- Tofu
- Buffalo Sauce
- Brussel Sprouts
- Onion
- Garlic
- Mushrooms
- Tomato
- Whole Wheat Pasta
- V8 Butterut Squash Soup
- Jalapeno Cheese
- Jalapenos
I started by baking some Tofu in Buffalo Sauce. I baked one side for 25 minutes, then flipped it and added some Bussel Sprouts to the baking sheet before cooking for 25 more minutes.
While the oven was going I sauteed some Onion, Mushroom, & Garlic with salt and pepper and cooked up some Whole Wheat Pasta. Once the pasta was done I emptied the sauce pan of the pasta and replaced it with the last cup of my V8 Butternut Squash soup. To the soup I added the cheese, then stirred until it was melted. Once the cheese thickened the soup up I added back the veggies and pasta and coated everything.
At the very end I added the tofu and brussel sprouts.

I told you it was a little crazy throwing everything together, but I really enjoyed the results. It was soo cheesy and soooo good!
For my Friday night treat the Easter Bunny and I went to my favorite frozen yogurt place.

I got the mini Tart Frozen Yogurt with Blueberries, Kiwi & Granola. Yum, Yum, Yum!!!! I definitely do not get tart frozen yogurt enough.
I have a very early wake up call tomorrow for my Team in Training run. TIme to call it another early Friday night!

thickening leftover soup with cheese and adding it to other yumminess is genius! maybe thats why it took ya 45 minutes to come up with it on the bike trail! I also LOVE brussel sprouts and buffalo sauce and frozen yogurt! what a nice easter bunny!
