Alright, the weatherman had assured me this nasty weather outside will clear up in time for my afternoon bike ride. I am putting all my faith in you Mr. Weatherman, please don’t let me down!
I’m sorry to hear everyone else is having as bad as luck as me with the shy sun. I hope your weather clears up soon as well!
I discovered midmorning that the PistachiOats I reviewed last night not only make great desserts, but great snacks as well!
I had a Blueberry and Dark Chocolate Chip Heart Healthy Cookie for my mid morning snack and found that it really filled me up. Which was great, because I was not my normal starving self as I took my time putting together a really great lunch.
I decided since it was Friday I would go with a Mexican Fiesta Salad.
It was good too!
I made three balls out of my Black Bean & Chickpea Dip then I broiled them in the oven for about 5 minutes. While the balls were broiling I also toasted up some corn tortillas and heated up some left over rice.
This salad was fantastic! In the end I had Spinach, Rice, Carrots, Mushrooms, Diced Jalapeno Tomatoes, Broken pieces of Toasted Corn Tortillas, Corn and the Black Bean & Chickpea Balls. It really was a fiesta in my mouth!
Baker’s Spotlight…
Today’s Baker’s spotlight is extra special as Vani from Fit For Free was kind enough to send me a sample of the cookies she is baking up for the bake sale to personally review.
Well as the coordinator of the Blogging Bake Sale I have to make sure the goodies these lades bake are up to par for those of you willing to dole out your hard earned cash to sample it. I think it is my duty to test out and make sure these cookies are safe to eat. I take this duty very seriously.

I nibble on a few of the pieces when they first arrived and made to sure to share then after lunch I had a big ole cookie to enjoy.
It was amazing! Very SOFT and MOIST! So yummy!! Yes Vani I think you have a hit with these, I give them my official Blogging bake Sale Approval.

Oh, and I have to thank Vani for helping me spread the word about the Bake Sale at my work. I let a few of my co-workers sample and rave about the cookies and then they asked me where they could get their own. I told them they will be up for bid during the Bake Sale and now I have had several requests to send them the link on the day of.
So just as a warning those of you planning to bid on these cookies are going to have to go neck and neck with my co-workers, best to bring your A game for this one!
