Go Weatherman!

by Meghann on April 3, 2009

Why is it the rest of the week can speed by but Friday afternoons seem to tick on forever and ever? I was ready for the day to be done and ready to hit the bike trail.

To make sure I had adequate fuel for my bike ride I tried a Peanut Butter GNU Bar the company sent me to sample.

I really like the size of this bar and the great nutritional stats: 140 calories 12 grams of fiber and an ingredient list I can understand!

It tasted pretty good as well! I can’t wait to try all of the other flavors they sent me.

I was very surprised when the parting clouds and gleaming sunshine the weatherman predicted were present and accounted for when I stepped outside after work. Two points to you Mr. Weathermen. Hello bike trail. :) I was on a bit of time crunch due to my unwillingness to clean my apartment the night before, so I did a simple 10 miles and headed straight home.

Since I don’t wear headphones on the bike trail I have to entertain my mind somehow and today it just happened to be my dinner. I spent the 45 minute ride thinking about what I had in the fridge and what would work. I came up with a pretty odd, but delicious combination.

This pasta dish included plenty of my favorites and was something I just kind of threw together as I cooked.

  • Tofu
  • Buffalo Sauce
  • Brussel Sprouts
  • Onion
  • Garlic
  • Mushrooms
  • Tomato
  • Whole Wheat Pasta
  • V8 Butterut Squash Soup
  • Jalapeno Cheese
  • Jalapenos

I started by baking some Tofu in Buffalo Sauce. I baked one side for 25 minutes, then flipped it and added some Bussel Sprouts to the baking sheet before cooking for 25 more minutes.

While the oven was going I sauteed some Onion, Mushroom, & Garlic with salt and pepper and cooked up some Whole Wheat Pasta. Once the pasta was done I emptied the sauce pan of the pasta and replaced it with the last cup of my V8 Butternut Squash soup. To the soup I added the cheese, then stirred until it was melted. Once the cheese thickened the soup up I added back the veggies and pasta and coated everything.

At the very end I added the tofu and brussel sprouts.

I told you it was a little crazy throwing everything together, but I really enjoyed the results. It was soo cheesy and soooo good! :)

For my Friday night treat the Easter Bunny and I went to my favorite frozen yogurt place.

I got the mini Tart Frozen Yogurt with Blueberries, Kiwi & Granola. Yum, Yum, Yum!!!! I definitely do not get tart frozen yogurt enough. :)

I have a very early wake up call tomorrow for my Team in Training run. TIme to call it another early Friday night!

Barker’s Spotlight…

Angela from Oh She Glows has been very busy this year. Not only does she had a kick ass blog full of very interesting trivia, tips, product reviews and new challenges, but she has opened her own online T-Shirt Shop and Bakery.

For the Blogging Bake Sale on April 6th Angela will be promoting her Glo Bakery by offering up a Glo Bakery Bars Sample Pack. This way you get a taste of all of her wonderful goodies and can help spread the word. The best part about this for all of my northern friends is Angela’s ability to ship to Canadians! That’s right Angela is my second Canadian baker!

Thanks Angela!

Cooooookiesssssss

by Meghann on April 3, 2009

Alright, the weatherman had assured me this nasty weather outside will clear up in time for my afternoon bike ride. I am putting all my faith in you Mr. Weatherman, please don’t let me down!

I’m sorry to hear everyone else is having as bad as luck as me with the shy sun. I hope your weather clears up soon as well!

I discovered midmorning that the PistachiOats I reviewed last night not only make great desserts, but great snacks as well!

I had a Blueberry and Dark Chocolate Chip Heart Healthy Cookie for my mid morning snack and found that it really filled me up. Which was great, because I was not my normal starving self as I took my time putting together a really great lunch.

I decided since it was Friday I would go with a Mexican Fiesta Salad.

DSCN3447

It was good too!

I made three balls out of my Black Bean & Chickpea Dip then I broiled them in the oven for about 5 minutes. While the balls were broiling I also toasted up some corn tortillas and heated up some left over rice.

This salad was fantastic! In the end I had Spinach, Rice, Carrots, Mushrooms, Diced Jalapeno Tomatoes, Broken pieces of Toasted Corn Tortillas, Corn and the Black Bean & Chickpea Balls.  It really was a fiesta in my mouth! :)

Baker’s Spotlight…

Today’s Baker’s spotlight is extra special as Vani from Fit For Free was kind enough to send me a sample of the cookies she is baking up for the bake sale to personally review.

Oh, and I have to thank Vani for helping me spread the word about the Bake Sale at my work. I let a few of my co-workers sample and rave about the cookies and then they asked me where they could get their own. I told them they will be up for bid during the Bake Sale and now I have had several requests to send them the link on the day of.

So just as a warning those of you planning to bid on these cookies are going to have to go neck and neck with my co-workers, best to bring your A game for this one!

*ONE LAST THING….

Death to the Sun

April 3, 2009

Welcome to another glorious Friday. Too bad the weather outside resembles that of a funeral to the sun. We’ve had awful weather all week and it looks like the trend is going to continue to the weekend. So not cool! Friday mornings are my non-running days in preparation for my long runs over the weekend. more »
