PistachiOats Review

Yesterday I discovered a larger, protein rich afternoon snack did the trick of controlling my unyielding hunger. I tested the same theory today and found another afternoon snack winner.

Last night I combined 1/3 cup Oats, 1 Spoonful Almond Butter, Cinnamon, Unsweetened Shredded Coconut, Mini Chocolate Chips, Dried Cherries, and 2 spoonfuls of Applesauce to make a Breakfast Cookie snack. It did the trick and that 5:00pm urge to eat my arm never came. :)

Which is good because it gave me time to complete Level 3 of my 30 Day Shred without daydreaming too much about dinner.

When I talked to my parents the other night my Dad had just finished making Sloppy Joes. It made me realize how long its has been since I’ve had Sloppy Joes and I have been craving them ever since. However, I wasn’t feeling the need to have a bun so I came to my version of Cheesy Sloppy Joe Fries. Basically, I’m a genuis!!

My Sloppy Joes are super easy to make and really, really good. It was one of the dishes my Sister used to beg me to make her when ever we ate dinner together. I never understood why people would need a can of Manwich to make Sloppy Joes when you can make them so easily with a few ingredients you probably already have in your pantry.

Meghann’s Super Easy Sloppy Joes (serves 2)

  • 1/2 pound ground Chicken Breast (or whatever meat you have)
  • 1/2 small Onion, chopped
  • 1 Carrot
  • 1/2 cup Mushrooms
  • Chili Powder
  • S&P
  • 1 clove Garlic
  • 1/4 cup Diced Tomato
  • Ketchup
  • BBQ Sauce (I used Country Bob’s All Purpose Sauce)
  • Honey Mustard

Brown the meat then add the onion, carrots, mushroom, & garlic. Once the veggies are soft add the seasonings and tomato. The trick to adding the ketchup, BBQ and honey mustard is to add just enough to cover the meat. I start with a big squirt of ketchup, a medium squirt of BBQ sauce and a small on e of honey mustard. You have to taste it to make sure the flavors are right. Then just let it simmer until the sauce thickens up and it looks done.

The Sloppy Joe went on top of some Rutabaga Fries that were roasted in the oven at 420 for 25 minutes. And I topped it all with some Jalapeno Cheese.

Don’t forget the pickle for something green. ;)

So, I had an Egg ‘McMuffin’ for breakfast, Pizza for Lunch and now Chili Cheese Fries for dinner. Who says I’m a health nut?HA

Dessert was a new treat I received in the mailbox the other day.

The nice people at PistachiOats were kind enough to send me a variety of their heart healthy cookies to sample and review for the blog.

Now, before you get your panties all in a knot concerning the big pistachio nut recall, let me assure you that the people at PisatchiOats guarantee their product is not part of the recall and safe to eat. Which was great news to me!

The PistachiOats come in three flavors Original, Blueberry & Dark Chocolate Chip.

I sampled one of each and besides the chunks of blueberry or chocolate chip there was no difference in overall cookie flavor or texture.

I especially like the ingredient list in these cookies.

I love it when I actually know what all the ingredients are on a list.

These are very hearty cookies with a distinct Oaty, Nutty flavor. They are not sweet at all and taste like health cookies I have baked for myself in the past. I really enjoyed the pistachioats cookies, but I was also the only one who enjoyed my own cookies I have made. If you are looking for a good ole fashion cookies these are not for you, but if you’re looking for a hearty snack chock full of good for you nutrients look no farther! These things are great!

Now, I must scrub my apartment to prepare for the multiple guests I’m having this weekend. So excited!!!

Work, Work, Work

Work is starting to get crazy around here. We are getting down to the last details of the events we have been planning since I arrived here. It’s very exciting to see everything come together, but also very nerve racking to make sure we get everything done in time.

I spent the morning mail merging, folding and stuffing. In between I also snacked on a mini Jocolat Bar and a handful of Addicting Awesome Almonds.

Lunch was both delicious and very, very filling.

It had been far too long since I’ve made a Flat Out Pizza.

On my multi grain Flat Out Wrap I layered Spicy Marinara Sauce, Left Over Roasted Veggies, & Swiss Cheese. Sooooo…. good!

With the Pizza I debated having salad but went with soup instead.

I had 1 cup of V8 Butternut Squash Soup, 1/2 cup of Chickpeas (meant to open the black beans, stupid same colored cans) and a spoonful of Jalapeno Diced Tomatoes.

The combination of flavors worked really well in the soup, I am sure it would have been even better if I had gone with the originally intended Black Beans, but what’s a girl to do.

Ok I have mucho amounts of work to start cracking down on. Gotta Jet.
