Time to Unwind

Fridays are the best. I get to sleep in, leave work at a decent hour and go for a bike ride. Seriously what could be better? Well I’ll throw in some Twilight Commentary on DVD for a little icing on the cake. :)

Luckily the rest of my afternoon at work flew by and I was able to fuel up for my afternoon bike ride with some Jalapeno Cheese and Harvest Wheat Crackers.

Unfortunately when I left work around 4:00 the lovely sunshine that had been bursting at the seams earlier was no now hidden by gray puffy clouds. Not cool! I debated not risking getting stuck on the trail in the rain, but the more I thought about, the more I realized the rain was not going to kill me.

I ended up enjoying 12 miles on my bike and the rain luckily never escaped from the scary clouds. :)

After got home from my bike ride around 7:00 I realized the great big experimental dinner I had plan was not going to happen. I was hungry and lazy. Instead I went with a quick ‘lunch’ like dinner that was tasty and ready in less then 20 minutes.

I have had cans of Tuna in my pantry forever so I put one to use in my wrap tonight with my version of a tuna salad.

For the Tuna Salad I combined:

  • 1 can of Tuna
  • A squeeze of Honey Mustard
  • A squeeze of Spicy Brown Mustard
  • Garlic
  • Banana Peppers
  • Tomatoes
  • Mushrooms
  • Blackened Seasoning
  • Mixed Sprouts

With the wrap I baked up some Rutabaga Fries.

I seasoned the Rutabaga with Blackened Seasoning & Salt then baked in the oven at 415 degrees for 20 minutes. I also had some Country Bob’s All Purpose Sauce for dipping.

And a little pickle.

It was a great meal for lunch or dinner.

Dessert were 2 of Danica’s Mock Tag-A-Longs.

Mmmm…. it’s going to be hard to get tired of these. :)

Now I’m off to obsess about Twilight and hit the hay early for my 7:00am 15 mile run tomorrow. Is it sad that I look forward to having my Friday nights in so I can wake up super early on Saturday mornings for long runs? Is anyone else crazy like me?

Tonight’s Baker Spotlight…

Report Pulling Day

Today is Report Pulling Day for me at work. Its one of the few days when I have to pull the headphones on at work and just completely zone out as I pull and edit report after report to send to my fellow co-workers. All the report pulling is no fun, but at least since I have the chance to zone out, the time seems to tick by a little quicker.

Its also days like these where I contemplate if I’m boredom snack or snacking for hunger?

Oh well, either way I immensely enjoyed the 5 minutes or so this Mini Cashew Cookie Larabar pulled me away from staring at my computer screen. :)

Lunch today was also another great escape from my computer. Oh how, I relish that hour.

I have been lusting after this can of Amy’s Thai Coconut Soup for a while now.

I was able to track it down last weekend and was just now able to incorporate into a meal.

The soup was pretty flavorful, but I would have loved if it had more chunks of veggies in it. It was a little too much broth for my taste and I am honestly not if I would but it again for that reason alone. BUT if you like soups that are all broth then this is for you!

With the soup I broiled up the last of my Tempeh, then sliced them up to create Tempeh Sticks that I dipped into some County Bob’s All Purpose Sauce.

The tempeh sticks were a great idea. Almost like having chicken tenders you dip in BBQ sauce. :)

And of course with a big container of yummy treats staring me down when I opened the fridge, I knew I had to sample one of Danica’s Moon Pies for dessert.

Honestly, I am not a fan of real Moon Pies (I don’t like marshmellow), but these looked much better then real moon pies so i gave it a shot. Boy was I glad I did. This taste nothing like a Moon Pie and that’s why I liked it. maybe it was the addition of the peanut butter that sent me over the edge? Either way this was good! 

And now its back to report pulling. I love my job, I love my job, I love my job…;)

Just wanted to let you know that I received the sports bra yesterday (talk about quick turnaround!).  I’m so glad I got it because I tried it out at the gym this morning and it is AWESOME.  The material is very comfortable and kept me from feeling too icky and sweaty and the support is second to none.  I definitely plan on purchasing more and would recommend them to anyone.  Oh, and the bright yellow color is super cute too!

I’m telling you these sports bras are great! Its funny because I actually purchased the yellow one at the Gasparilla Expo. Lindsey and I can be running twins.
