Salad Overload

The one good thing I have to say about my protein shake breakfast (besides the fact it tasted like a Reeses!) was that it kept me full for hours!

Maybe it was the combination of Peanut Butter with the Shake Mix? But I was not even tempted to eat a mid morning snack and actually could have still waited another hour or so to eat lunch, if it wasn’t for the fact I knew Abbie was crossing her poor little legs at home!

The lunch I had planned in my head also encouraged me to head out for lunch around my normal noon time.

I have been dying for boats full of veggies lately. I just never seem to have enough, so for lunch I decided to just throw every veggie I had into a great big salad. I love my kitchen sink salad, I tend to be a little over zealous with them, but they always get the job done!

This monster salad contained:

  • Spinach
  • Sprouts
  • Tomato
  • Banana Peppers
  • Small Apple
  • 2 hard Boiled Eggs
  • Mushrooms
  • Pumpkin Seeds

For a little spice I made a ‘Buffalo Vinaigrette’ by mixing up some Buffalo Sauce, Olive Oil and Vinegar.

After lunch I caved into sweet tooth and grabbed a bite size Snickers and Hershey’s Bliss on my way out the door.

Baker Spotlight…

I was THRILLED when Amanda agreed to participate in my 2nd Blogging bake Sale on April 6th. Not only is she a total self less sweeties, but she is a phenomenal baker as well.

Trust me I can vouch for her!

Amanda was kind enough to send me a batch of Kit Kat Blondies and a batch of Heath Bar Inspired Blondies in the past.  Both batches of  blondies were of course amazing and a complete indulgence! Trust me you are going to want to bid high on Amanda’s treats!

I am like that with veggies too, I always make a HUGE salad and then am convinced I made it too big and there’s no way I can finish it…but then I always do : )

Awesome big salad – I need to get more creative! I have never seen banana peppers in the grocery store, only at Subway or Pita Pit…but they are so good!

i could live on massive salads all day every day. provided they were MASSIVE and crazy with toppings of course 🙂

yum to the shake. I used to go to the gym at 5 every morning, and on my way out for breakfast I would have a chocolate meal replacement shake with peanut butter. if my current gym could make those for me i would go every. single, morning.

Thanks for the spotlight! 🙂 I’m excited to bake for Bake Sale #2! I also love making kitchen sink salads…it’s always so much fun to try different non-veggie additions on a huge bowl of greens.
