Good Riddance Level 1

Today was my final day with Level 1 of the 30 Day Shred and I have to say I am not going to miss it. I have not sneaked a peak yet of level 2, but have heard rumors there are no lunges involved. Thank God! My legs are begging me for a rest from lunges.

After a long day of work I did my trick of starting the DVD as soon as I walked in the door, so no excuses were permitted. I would also like to state that when I do the 20 minute Jillian Micheals DVD I make no effort on putting any work out clothes or shoes one. I have done the DVD in a dress, without pants on, with out a shirt on, in just my bra and panties, in my PJs, in straight up work clothes and in good ole shorts and t-shirt. However, I have not done the DVD in the nude.. I think I have to draw a line some where

What are your views of working out to DVDs in your living room, Do you glam it up in your rock start work out clothes? Or do you made do with what ever you have on at the moment because its not worth the effort to change for the session?

After my working up a sweat in underwear, I made dinner in my underwear. Living alone rocks! LOL

I am still trying to eat my way through the veggies form the Farmer’s Market, so the start of tonight’s meal was a Zucchini straight from the Market itself.

I made simple Zucchini Cakes with this particular zucchini. I shredded the zucchini with some onion, garlic, jalapeno hummus, oregano, s & p, egg whites and then added whole wheat bread crumbs until I could form patties. I then pan fried until brown and crispy. The Country Bob’s All Purpose Sauce paired nicely on top of the zucchini cake.

On the side I steamed the last of my Kale with a small Apple…..

It was simple dinner, that did not require too much preparation, yet was tasty and veggieful.

Dessert was my M&M favor from Caitlin’s wedding back in January.

The M&Ms have been spending their days in the fridge and were still cool and chocolatey. It’s hard to believe Caitlin’s wedding was over 2 months ago now!

Before I left work today I enjoyed the rest of the Almond Butter I didn’t finish off yesterday with some Carrots.

This time I made sure to lick the almond butter container clean. The carrots only got me so far. ;)

Who else is ready for Friday tomorrow?!?!? I’ve got a great weekend planned and I can’t wait for it to begin!

Simple Harvest Review

I was pleasantly surprised to arrive home yesterday afternoon to a large package of goodies.

Ever since I started seeing Quaker’s Spa Package giveaways popping up around the blog world I became an avid stalker of the said blogs commenting to enter any one I could. Last week I let out a little squeal when Jenn from Eating Bender let me know I had won one of the coveted packages.

Inside was a beautiful plush Robe, Slippers, and two boxed of Quaker’s Simple Harvest Bars to sample.

I decided to have one today as my mi-morning snack to test out.

Though the ingredient list was less then stellar, I was pleasantly surprised I could actually pronounce the majority of its contents. This gave me hope.

Upon first bite it tasted like any other granola bar – not too sweet, a decent mix of crunchy/ chewy texture and the pieces of dried fruit were very mild, not too overwelming of taste. I very much enjoyed the good size chunks of chocolate that made certain bites better then others.

Overall, I give this bar a good ole thumbs up. I don’t think I would actually buy this bar in the store as I really don’t tend to buy granola bars other then Kashi for some reason, but I will happily eat and enjoy the rest of the bars I received.

I hate to say it, but its my unintentional day three of left overs for lunch. Now, let’s review left overs make great Pita Stuffers, Salad Toppers, and now Desconstructed Meals of what they once were. Case in point below.

As I was coring the Orange Tomatoes last night to prepare for the stuffing, I ended up with a lot of perfectly good tomato inners. Not one to waste good food I put the orange loveliness into a container to save for today.

I used the tomato insides almost as a spread on a piece of toast then melted a piece of Swiss Cheese on top under the broiler.

The open face Tomato & Cheese sammy ended up being the perfect way to enjoy the tomato left overs. The flavor was right and I loved the mix of the warm tomato and gooey melted cheese.

Next up I also had some left over of the Ground Turkey Filling that I just ate plain on the plate.

I took the original concept of my dinner last night with the Stuffed Tomatoes and using the exact same components  deconstructed it to a fabulous, new lunch. Delish!

Morning Mess

It was the same old, same old in Graduate Meghann land this morning. The alarm went off  at 5:30 this morning, I jumped out of bed, let Abbie out, then headed out the door for a 5.5 mile run. I am starting to recognize the cars and people I run by every morning. There is more »
