This morning I reminisced about the traditional Irish Breakfast I enjoyed in Ireland last year, now I would like to focus on one of the wonderful lunches I consumed over there.
I ordered this little beauty at the cutest little coffee shop in a little town I don’t remember the name of.
The whole time I had been in Ireland I was really enjoying the Egg Sandwiches I was being served, so I tried to order one off the menu, instead I ended up with the above plate of yumminess. I was pleasantly surprised with my meal and it had to be my favorite order that I made by mistake the whole time I was there. I really need to try to recreate the concept one day.
My lunch today was not on quite the same level as the one in Ireland, but it was still a delicious creation served on a festive green plate.
I have discovered the best way to repurpose any left overs is to stuff it in a Pita and call it a day, which is exactly what I did with the Vegetable Extravaganza Cheesey Chickpea Casserole from Sunday night. It made the perfect pita stuffer.
On the side I had a slice of Tomato and Avocado.. It seemed an odd item to have as a side dish, but it worked well.
I then went back and grabbed one of Melissa’s Pumpkin Muffins.
I could hear them calling my name from the fridge!
Mid-Morning I snacked on a mini Chocolate Coconut Chew Larabar.

I dont miss Irish food b/c the black and white puddings are NOT appetizing – even my hubby disliked it! I did like my eggs at the B&B’s we stayed in!
and seriously you cannot find a single solitary green veggie in Ireland – by midweek Hubby was CRAVING a green salad – it was that bad!!!
