When my parents were packing up from out BBQ picnic on Saturday my Dad was in the midst of throwing away the plate of burger topping veggies when I told him to STOP! There was perfectly good Avocado, Tomato and Onion on that plate I could easily incorporate in lunches this week.
I am not one to waste perfectly good food… especially when its fresh, yummy veggies.
I made a wonderful Avocado, Tomato, Onion & Honey Mustard Sandwich on my Pumpernickel Bread.
I toasted the bread the smashed the avocado on it with the other fillings. I also had a pickle on the side. It was delectable.
To go go with the sandwich I has a cup of Amy’s Low-Sodium Chunky Tomato Bisque with 1/2 a can of Chickpeas mixed in.
The chickpeas added a little protein to my meal and a nice chewiness to the soup.
Mid-morning I had a 1/4 cup of Pumpkin Spice Trail Mix as my snack.
Fellow blogger Kelsey sent me a moving e-mail today concerning her friend Monika and how her and her friends are showing their support.
Monika, an avid runner and athlete, recently discovered the chest pains she had been experiencing were actually being caused by a cyst pressing on her heart and lungs. With surgery scheduled in the near future, she will not be able to run for a while.
I don’t know about any of you, but the thought of not being able to run scares me and anyone of us could come face to face with the same fate. In the spirit of ‘living life’ Kelsey is collecting miles via her blog to show her love and support for Monika.
Her goal is to collect 181 miles in 2 weeks!
