Monday is Not a Good Running Day

If you were to divide the week by days that are great to run and those that suck, I say Monday would fall in the ladder. Maybe its because Monday are just all around never fun or maybe its because I usually push myself too hard on the weekend, but Monday runs always seem to take it out of me.

Today was no exception. I had my Team in Training practice tonight at Blue Jacket Park. After a long day of work and temps in the 80s, I was just not feeling it. I ran a solid 5k in 27:04 then decided to walk and jog with my Mentor and Coach. Atleast I was able to push myself for the first half of practice. ๐Ÿ™‚

To fuel myself up for my run at work I had a Carmel Nut Brownie Luna bar around 4:00.

After my snack one of my co-workers put a random piece of chocolate on my desk.

It had a fancy wrapper with a description that was not in english… I was intriqued so I opened the chocolate and discovered a beautiful tri layered treat.

It tasted just like Chocolate Peanut Butter Fudge. The best random chocolate I had ever discovered on my desk ๐Ÿ˜‰

I was really surprised of myself at my TnT practice regarding treats. It was one of the mentor’s birthday so there was not just Cake, but homemade cupcakes staring me down. Oddly enough, after my run I had no craving what so ever for either of them. I was the only one in the group to turn down the goodies. Sometimes you want chocolate and sometimes you just need real dinner.

So I came home and made myself a wonderful real dinner.

I roasted up Eggplant, Carrot, Onion, & Brussel Sprouts with some Curry and Red Pepper spices in the oven at 410 degrees for 20 minutes.

I then topped the roasted vegetables on top of half a package of Kashi Moroccan Curry Pilaf and drizzled with some Annie’s Cucumber Yogurt Dressing.

The combo was very spicy, so the yogurt dressing gave the meal a cooling effect. It was a very easy, quick meal that was yummy.

After my dinner, I was finally craving some chocolate and wishing I would have brought home one of the cupcakes from training! Instead I had two as equally satisfying Tag Along Cookies. ๐Ÿ™‚

I am now exhausted and ready for bed!

Save the Veggies!

When my parents were packing up from out BBQ picnic on Saturday my Dad was in the midst of throwing away the plate of burger topping veggies when I told him to STOP! There was perfectly good Avocado, Tomato and Onion on that plate I could easily incorporate in lunches this week. I am not more ยป
